Oh my gosh I just finished making this, and it was incredible. So over the moon for this dish. My dad is getting chemo treatments right now so his tastes are a bit off, and he even said he could taste how good it was! Thank you!

Here's the recipe for the main dish 800g potatoes Mustard seeds Curry leaves (handful) 2 thumb sized pieces of ginger Turmeric Chicken thighs with skin(per serving) Eggplant 2 peppers(orange&red) Onion Red and green chill 4 tomatoes Enjoy!

Made this twice now, when I can't be bothered to get fresh spices I always have ginger garlic purée on hand (I love Indian food) and all of these spices, I even throw in some cardamom pods, anise, coriander powder, whatever I have, chilli powder if I don't have fresh chillies, it's simply divine and so healthy. It was amazing with carrots and sweet potatoes thrown in too! Make a kedgeree with the left overs!!

Five years on, this is one of my go-to recipes. I throw in some shivered toasted almonds in the spinach salad but, other than that, I've made it in its original form tens of times. The flavors are divine, it comes together quickly and you can tidy up while it's in the oven. I've added whole okra sometimes, for some green. Jamie, you rock!

this came to me when I was blank about what to do for dinner last night. had ginger, chicken, curry powder, whole grain mustard, baby potatoes, red pepper, and yoghurt. made a modified version of this on the stove top. happy tummy! put in a lot of ginger since we're Filipino and used to it. also used garlic along with onions as well.

Indian style chicken tray bake Gently Fry off 2 tbsp olive oil One handful of curry leaves 2 tbsp mustard seeds 2 tsp turmeric Thumb size piece of ginger 4 cloves of garlic 4 chicken thighs Salt Pepper Add to a baking tray full of 800g Potato’s par boiled 1 Aubergine 3 Bell Peppers 1 Large Onion 2 Chillies 4 Tomatoes Bake in oven 45 minutes 190°c / 375°f in the oven Mint, yoghurt dressing Into a blender add A bunch of mint 150ml Greek yogurt Half a chilli Small nob of ginger Half a lemon juice. Salt Baby spinach salad.

Just tried this with the freshly made raita..... unbelievable. Just fantastic. The thighs are the perfect meat for it, the spice mix with a dash of raita and a coriander leaf.... heaven.

Reminds me of a time when Jamie and I were younger, I was in the same class as him in school. He always used to eat pencil sharpennings and always had shaven forearms. Wore a golf glove to school for a whole year too! His mum used to feed him raw chicken with vinegar for lunch but somehow he never got ill. Odd family but really nice bloke.

hi Jamie great recipe. one suggestion though, it is better to blend mint, ginger and chilli with a spoon of yoghurt and then add it to the rest of the yoghurt and whisk. this will make raita thicker and gives it better texture.

Just made this, very nice. Unfortunately didnt have mustard seeds in the shop so I swapped for a tandoori paste. Dressing was great. Next time probably wont cook for an hour as it burns the aubergines.
