I hope you all enjoy my take on this delicious Trinidadian delicacy. This is a great breakfast, lunch, dinner, or snack item. And you can customize it as much as you want.
Ingredients and Measurements:
For the channa:
1.5 cups soaked channa/chickpeas
1/2 cup dhal/split peas
1 tbsp. curry powder
1/4 tsp. dye/tumeric
1/2 tsp. geera powder (roasted ground cumin)
1/4 tsp. amchar masala
1/2 onion chopped
2 pimento peppers (optional)
6 cloves garlic
2 tbsp. green seasoning
2 tsp. baking soda
oil
salt to taste
water
For the dough/bara:
2 cups flour
1/2 tsp. yeast
1/2 tsp. tumeric/dye
salt to taste
2 tsp. sugar (brown or white)
water
oil to fry

Oh my Lord. I made these this morning. I forgot about the dal but it was still so great. I ate 3 already. Thanks Matthew, I keep rewatching this video and every time I say to myself, "I am going to make this". Today was that day. I think I am in the market to sell.🤣. This summer I have to plant some pimento pepper plants it's so hard to find the fresh ones. Thanks again.❤️

This look really nice. I will definitely try it. Thought I’d mention that the baking soda releases the skin from the chick peas. It’s usually done to get a smoother creamer humus in Middle East cooking

Matthew's Guyanese Cooking the channa came out looking and tasting perfect. The bears however, I had a wee bit difficulty in keeping it flat to put it to fry. It spread out great in the plate with the oil, but the transfer was my down fall. I shall try it again though.

I usually kneed the dough first because it has to rise so while you're cooking the channa you can let it sit covered.

Just make sure you buy a casareep with the least amount of ingredients and use either pork or beef.

Many roti shops put the dhal in the channa mix. It gives a nice silky texture to it.

Nice recipe but because you have hairy hands. I feel you should have wore fitted gloves so the hair from your hand won't get into the dough.

Your videos are great I’ve tried some of the recipes and it turned out great, thanks for sharing. Why is there so much hair on your hands? My mom wouldn’t eat anything you cook because of all that hair. Try some hair removal cream or shave it off. I don’t wish to offend you but all that hair is yucky to me.
