This is the way I was taught to make Cassava Pone and this is the way I love it. I do not add milk or raisins but if you wanted to you can.
Ingredients
4 Cups of fresh Grated Cassava [ yuca]
2 cups granulated sugar
1 Cup of fresh grated Pumpkin or Squash
1 Cup of fresh grated dried Coconut
4 ozs sweet unsalted soft butter
1 tsp cinnamon powder
1/4 tsp. nutmeg
1 tsp vanilla extract or essence
Raisins optional

The most authentic demonstration of Cassava pone as my mother who was from Tobago told me you shouldn't add liquid as the cassava binds it. Great job

It can be done in a food processor. It retains the same amount of liquid as if grated. One addition i make is to add 1/4 cup less sugar than here and compensate with two table spoons of condensed milk. It really binds everything together and gives it a glue-ey texture. Thats just how i like it.. great video agaib as usual.

This is the only recipe I've ever used and it comes out perfect every single time, even if it's years apart (I don't make it often because I don't like to grate cassava). Thank you so much Natasha!

When I'm making pone, I use my food processor to grate the cassava, and coconut etc; comes out perfectly!

@@sachinramsundar6968 hi when you bought your food processor did it come with a flat blade on top,? Use the grated side then leave it to grind more fine in the processor

I tried this. Came out perfect!! Thank you. Didn't have pumpkin so I used sweet potatoes. And a couple dashes of cold water. Came out gluey n nice.

l grate everything in a food processor. One ingredient at a time , you don't need water as in a blender.I also add about 1/2 of water because l like it glue-ee.Also with brown sugar.Natasha your pone looks delicious.She is a great cook and baker.I like how professional you adress your audience on youtube.

I also freeze ingredients in thick ziplock freezer bags . When thawing make sure that you do not lose any liquids. And there will be no effect on taste or texture.

Very nice Natasha. Thanks for the link. Will try it. But only problem is, I haven't been able to get fresh cassava root, only the powder. Can I use the powder instead, although I will try to find an Indian shop that sells the fresh stuff.

Crip King only if it gets as fine as the grater gets it. if it's to coarse it would still taste great but the texture will be off.

You can use sweet potato instead of pumpkin but not both of them together, my granny told me that.

Natasha can you add any liquids to this such as evaporated milk or coconut milk. I see some recipes like dat. What do you suggest? What about a hint of ginger?

I prefer not to add liquids you really dont kneed it..if you want to add some milk you can and yes you can add some ginger.

The addition of pumpkin is specific to Trinidad. Some other islands add sweet potato instead but u don't technically "need" either. I would suggest adding ginger and some allspice as well

I don't like pumpkin either but it blends in soon well with the other ingredients you will never know it's there. You just get an exotic blend and taste.

Yes you can but it can make the mixture turn a dark colour.

Most people say if you're going to use pumpkin don't use sweet potato as well. Use one or the other but not both
