INGREDIENTS
4 medium, ripe tomatoes (about 1 and 1/2 pounds), roasted, peeled and rinsed
3 cloves garlic (or to taste)
1/2 small sweet onion (or to taste), very thinly sliced!!
Hot pepper, to taste (habanero, scotch bonnet, cherry)
3-4 tablespoons extra virgin olive oil
salt, to taste
