Ablacim, do you think I can thinly slice the frozen chicken with a vegetable peeler? It looks hard to do it with a knife unless you have some skills. If it works, vegetable peeler might be easier, faster and thinner but then it might be too weak to work in the first place.

It seems like a good idea if your peeler is strong and sharp and should be a bit in the thicker side I think. Too thin might not work well when cooking

Thanks, never tried to freeze before baking so not sure because they need to rise before you bake. But you can freeze after you bake and take out as much as you need. I did that and works fine
