How does rice become resistant starch?
The cooling of rice after cooking causes retrogradation of starch, which becomes a non-absorbable product in the human digestive tract.

I always learned that you have to put the rice in the fridge overnights because of bacteria if you leave it on room temperature overnights

Everything has to be put in the fridge so bacteria or fungus don't grow in them . Dr Means put the Rice first in the fridge before eating it so the starch Reduces and doesn't cause us to Gain weight

I love rice . I wash the rice before cooking. It takes out the starch . I put a little salt, olive oil and a tablespoon of white vinegar and simmer the rice . When is finished cooking - we put the rice to refrigerate and eat it the next day . I have been doing that for years .

I've always rinsed the rice until the water runs clear, then make a fried egg rice after it sets overnite in frig. But havent eaten it in several years. I did stop rice, sugary foods and all bread, crackers. Lost 50 lbs, I sure miss the egg fried rice, not the other stuff. Moderation is key, I suppose, and it takes a while to make, so I wouldn't make it often.

I eat healthy drinks lots of herbal teas specially bayleaf teas with lemon and honey . For my age I keep well . The picture you see on my profile was from a recent photo .

I believe he is referring to cooked rice. Wash 3x then a teaspoon of vinegar to keep longer for spoilage. Then cool and place on fridge for the next day. I Always reheat only the amount I need to eat and sprinkle a bit of water for moisture & steam. ​@@HarvinderSingh-ry3dw

As Asian who eat white rice everyday, i thank you for the good news for my habit. Since washing rice cooker everyday is a pain, i cook my rice twice a week. I refrigerate & freeze my rice for convenience. Overeating everything is not good. There is such thing of too much of a good thing. I don’t ever season my rice because i eat it w/ a various meat & vegetable side dishes and a soup.

I think whats missing here is the correct way to make rice. 1. Thoroughly rinse rice before cooking. 2. Leave to completely cool before putting into fridge. 3. Reheat rice at a high temperature. 4. Do not leave rice in fridge for more than 36 hours. Throw away any uneaten rice. This will help stop the arsenic and starch attacking your system .

@juliawah8674 because you keep it overnight. Some people keep it for days either in or out of fridge for days, and end up getting very bad tummy , this is due to arsenic build up.

Oh my gosh! Who would have thunk it? I don’t eat rice very often, but I love Jasmine rice. So I cook a big pot, let it cool and then put in small baggies and freeze. Then when I need a quick dinner, I take out a package heat it with some veggies and a little chicken and voila! I always felt a bit guilty but no more! Thank you so much for this!

Freezing it seems extreme to me. It's good enough to simply save 3/4ths of what I make in the pot, eating the first part fresh, in a container, and keep it in the fridge, for whatever rice that is. That keeps for at least 4-5 days. I have it and my dog has it too. Same for couscous and orzo.

For years I have been batch cooking rice, separating it into portions and freezing it. 2-3 minutes into the microwave when I need it. Definitely tastes better too.

I do the same thing! Especially when I don't feel like cooking it, I get a few quarts from the Chinese food restaurant ( along with my soups) and portion those out into single portions and freeze them! I enjoy them off and on for a few months! God Bless!

My sister-in-law and I were just having a conversation about rice last night...this is great info! I'm not sure if this is good, but I started pouring about 2 spoons of apple cider vinegar in the water as suggested by my mom. Actually it’s great idea for all grains , for this reason you bring it out good nutritions from your grain. But don’t cook when you soaked your rice with vinegar, you can rinse it cold water then cook . So you in right path

May I also add a comment on high cholesterol ? Something most doctors won’t tell you. Stay away from sugar. Not only is it not good for you and addictive. It comes along often with other highly processed garbage.

I soak my rice a minimum of 12 hours sometimes up to 24, once cooked I immediately freeze most except the one I will eat the following day. That goes in the fridge..

I use a rice cooker- add 2 tablespoons of olive oil, 1/2 tsp cumin, 1 cup washed rice w/ water. After a few minutes; I add 1 tsp ground turmeric & a dash of black pepper This way; is it better? Less starch more nutrients? Good video

get yourself a rice colander then wash all the powder off it, and rinse several times until the water is clear of the starchy-colored water. soak for 3 hrs, drain the water, and let it sit in fridge overnight......so tasty and goes down the pipes easily.

That's great to know. We use a short brown Sprouted Grain Rice most of the time but use white rice too when we don't want to wait 45 min. We often have extra and put it in the frig for soup or beans the next day - perfect! Thanks Doc!

Yes, what brand of sprouted brown rice is that? Do not use brown rice from Texas, Arkansas or Louisiana because it’s the highest in arsenic But rather instead use brown rice from California, India or Pakistan which have the lowest arsenic. Parboil rice like you do pasta with 5 to 1 or 10 to 1 water to brown rice for 5 minutes drain and then put in about 2 parts water to 1 part rice, and let it absorb. This method helps get rid of some of the arsenic. Then refrigerate overnight then reheat the next day to build up resistant starch so it’s healthier to digest it. Use this refrigerator method for both brown rice and white rice. White rice has less arsenic than brown rice because it resides in the outer husk.

Ratio of: 2 parts water ‘to’ 1 part rice. “But first” like I already said before to parboil brown rice like you do to pasta with 5 to 1 ‘or’ 10 to 1 water to brown rice for 5 minutes drain the water and then put in about 2 parts water to 1 part rice, cover with a lid, boil again and let it absorb. This parboiling method does not have to be done to white rice. Just rinse white rice several times until the water becomes clear before cooking. ~~Yes, white rice very much so has less arsenic than brown rice, because the arsenic resides in the outer husk of brown rice which is accumulated from the area that it is grown in being in the old cotton fields of the southern US. ~~Brown rice has more fiber then white rice due to the outer husk. ~~>>Cooking then refrigerating cold overnight then reheating or eating cold

This video has gotten the most feedback of any video I have watched! I Dontrelle know about arsenic levels in any kind of rice. About a year ago, myself and a friend decided to change over from white rice to brown.. we generally eat together once a week. We compared notes. She was having alot of diarrhea! For the first couple of weeks, I was fine. Then I started getting diarrhea.. One week, We ate spaghetti as well as some macaroni salad . We were ok with the macaroni salad. We decided to eat no pasta for a week, we were better. The moral here is everyones system is different. The question is what were we reacting to? Ive grew up on pasta and never had an issue with it. Also, if you read labels on food you may be shocked to find out all the extra ingredients that are in them. Most people don't realize that white bread & pasta, is actually wheat with a could layers taken out. The layers taken out contain most of the fiber, and many of the nutrients. These ingredients are then chemically added back into the bread and pasta, including fiber. Fiber was and still is one of the reasons ( if not the main one) most doctors ( whether on the internet or in person), seem to toot the fiber horn. Yes most people don't get enough fiber. But there are healthier foods that contain fiber, and other nutrients. I still eat pasta, but friends have introduced me to other grains like ancient grains. Then there are ethnic grains , check out ethnic rices and grains like Italian, Middle Eastern ... I eat at ethnic restaurants. The noodles ( most don't use the wird spaghetti) have many different textures & tastes. When I cut down the amount of bread I was eating, I found out I felt better. I didn't know I had any issues I've gone on rotational diets, many times in my adulthood. This is cutting out one food or group of foods out of your diet for a period of time. Ive done this a number of times and found that I am not allergic to certain things, but I can tolerate only a certain amount of something before I have a reaction. .

I eat basmati rice regularly by mixing one part of rice with 3 to 4 parts of sautéed mixed vegetables ( 1 : 3-4 ratio) so as lower the glycemic index of rice, and targeting the slow release of glucose from the ingested rice.

Just recently I've been reading, and I've never heard this ever before, that rice grows mold and that you should not eat rice older than 12hrs etc. I can't hardly believe this since rice is such a staple across the world. Could you comment in one of your future videos please.

Brown rice it grow natural brown colour, white rice grow natural white colour, even have purple rice colour grow in some part of Asian country like in Malaysia

WOW!😮 I am a pre-diabetic & am dieting to lose weight as well. I have cut rice, which I love, out of my diet because I have heard it is an absolute no-no on the diabetic diet and especially if trying to lose weight! THANK YOU!!! Hi Dr. Mandel, thank you for the rice information, truly, inspiring to know. However, according to the comments there are listed suggestions and on going questions as well. So therefore, I would like to ask a few questions to make sure I understand for clarity. Normally, I purchase organic white rice, or brown, or purple rice. 1. Does it matter if it’s organic or not? Should the process be for all rice regardless? 2. Should all rice be rinse first before cooking? 3. I was told always pour off the first water once it start cooking, (maybe within few minutes of cooking time). Then add new water to the pot and continue cooking. 4. Now, after the cook rice is done, drain water from the rice and allow cook rice to cool or should you allow the entire pot with water to cool and then drain? 5. Place rice in the refrigerator by placing it in a bowl, pot, or ziplock bags? It can also be kept for overnight or days(?). 5. The maximum time frame for refrigeration or freezer is? Once refrigerated, add your choice for preparing and serving. Thanks,

Somehow, you gave us what we need to know. I've been doing this for ages, even putting previously soaked raw rice in the fridge, when heat exhausted, and behind schedule! There could be one problem, and that is when the raw/cooked rice ferments so much that it goes bad! Raw soaked rice from the fridge with a slightly unpleasant odour can be redeemed by washing once or twice. If the odour persists, sadly, you have to discard it! If the cooked rice changes color or gets blotchy with fungus, in the fridge, discard it! Its not easy to estimate the quantity of fridge stored cooked rice you need, as the volume looks smaller. Allow the stored rice to come to room temperature before consuming or steam/ microwave it! If you find the estimated quantity of rice, more than you can eat, dont force feed! Forgive yourself for and waste/discard the excess!

The cooling of rice also encourages bacteria growth, which is why "Cold Fried Rice Syndrome" is a thing. There's a happy medium. So freezing the rice is okay, as long as your freezer is properly freezing. But once the bacteria grows, you can't safely cook it or eat it.

I love rice !! We have a rice cooker the fool proof way to make rice and I do eat it fresh and hot but I always keep the leftovers and eat it the next day , Rice , Eggs n Kimchi good breakfast

I read the same thing applies to potatoes. Bake a potato, put in the fridge for 24 hours and reheat.

@@bonniebenz8792 When starch-containing foods like rice or potatoes are cooked and then cooled in the fridge for 24+ hours, some of the starch converts to resistant starch, however, reheating or cooking them again breaks down the resistant starch, rendering it no longer resistant to digestion. The trick is to just mix it or put it next to stuff thats hot/cooked recently.

This makes me more determined to batch cook and freeze pasta , rice and potato dishes. I live alone so this will solve a lot of problems with motivation to cook and using up ingredients before they go off. I was freezing away pasta sauces and curry dishes and cooking fresh pasta and rice when I defrosted them. I will change this now.

But, check your glucose after every hour for 4 hours to make sure it doesn’t spike YOUR blood sugar. Even after refrigeration, it spiked mine. Not as much as non-refrigerated rice, but it spiked it. EVERY TIME! The numbers were almost the same as the pre-refrigerated rice. A guy on KZbin did it and the numbers weren’t too far off from cooked to refrigerated rice. Get a glucose meter and check what it does to YOU and YOUR body. I have learned listening to all these KZbin doctors that one size does not fit all. Please check for yourself. Oh, and I’m NOT diabetic.

A lot of them are basically regurgitating the same information! I would check out any doc you “like” on here and see if what they are saying works for YOU.

This works for bread as well, another carbohydrate. Buy a multigrain bread, not white, & put it into freezer for 12+ hours, then unfreeze it in the fridge. It also becomes starch resistant.

As an Asian rice is part of our diet, i have to eat less now that it has to be found no benefits to the body. And in Europe they told us in our learning that we should never heat rice as it could cause food developing bacteria to make people ill therefore it is not safe to eat. BUT, I've heard Many Doctors say there is Arsenic in White Rice. Is why I Stopped giving my Dog some in his food, and myself too. I Hope You'll be Able to Answer this, for me, love Your site. Wish I could be better, but thankful I'm doing as well as I am. Considering I've had Heart issues, with Open Heart Surgery in 2022. And Type 2 Diabetes for a long time. I do like White Rice Hope You're right about this frig thing BUT, I STILL NEED TO KNOW ABOUT THIS ARSENIC THING IN IT ❓❓❓ Of course, I don't think Most of what is being offered to us as food, is good for us, with what they're doing to it. I am looking at the comments and seeing a lot of people saying " fantastic" "great" "I am going to cook and refrigerate my rice". Please check your blood sugar before and after consumption of the RS rice and that is the best way to gauge if its working for you, especially those who are diabetic!

Thank you Dr. Mandell,. On KZbin, there are many discussions regarding a carnivorous diet. Some of them are extreme and won't support rice in any way. Chinese and Vietnamese and Indian eat rice and yet maintain their shape.
