RECIPE
INGREDIENTS
4 egg whites
1 cup granulated sugar
2 tablespoons fresh lemon juice or apple cider vinegar, to
stabilize
3 tangerines
2 navel oranges
1 ruby red grapefruit
1½ cups whipped cream (store bought or homemade, see
page xxx)
1 tablespoon honey
A handful of fresh basil or mint, to serve
1. Preheat the oven to 250°F.
2. In a large bowl, use a stand mixer or a hand mixer on high speed to beat eggs until frothy, being careful not to over mix, you don’t want it to look grainy. Add the sugar and lemon juice slowly, 1 tablespoon of sugar at a time, and continue to beat until it forms stiff peaks. Test it by pulling the whisk quickly up from the bowl and looking for a pointy, glossy top.
3. Spoon the beaten egg whites onto a parchment-lined baking sheet. Use a spoon or soft spatula to spread into a rough circle 9 inches in diameter. Bake until firm, about 1 hour. Allow to cool to room temperature in the oven with the door open.
4. Prepare the citrus by cutting off the rind and white pith so you can see the citrus flesh. Slice each fruit into ¼-inch-thick rounds.
5. To serve, transfer the cooled pavlova to a platter. Spread the whipped cream on top, leaving a 1-inch border around the edge. Arrange the citrus slices, drizzling with honey and garnishing with fresh basil or mint.
TIP: The meringue can be made ahead of time and
stored for up to 2 days.

pavlovas are pretty popular in norway around our national day, so here's my opinions: - strawberries, raspberries, blueberries and chocolate flakes are the best topping. who tf uses citrus. - nobody cares about cracks, it's covered in cream and will be eaten anyways. - pavlovas can absolutely be layered, idk why that disqualified Eugene... - Cheating on your wife is not part of the recipe

All this video has taught me: 1) Australians are PASSIONATE about pavlovas 2) pavlovas are an Aussie thing? What?! My dumbass thought it was Russian. 3)Neds obsessive ‘wife guy’ actions are gross in hindsight. 4)Keith is a fucking genius and I love him. I want a ras-rasp-strawberry Edit: New Zealanders are ALSO passionate about pavs. I’m British, we only have potato based stuff and quite frankly, I am not passionate about anything.

re 3, I said it in another comment but the weirdest thing about this situation is going back to old videos and, like, Ned just gives me weird fucking vibes, I can't really explain it but he just makes me kind of uncomfortable, I used to think his over the top anger was a joke but looking at it now it seems like a genuine emotion and is just...taking this whole thing way too serious, there's other stuff going on I can't really pick up on but, I don't know, he just feels "off" I guess

The concept of buying the dip is all about buying digital assets when their prices are down and selling off when the price rises just has the current market is down. Holding is profitable, although trading is far more profitable. Honestly as someone who bakes but never a pavlova. That should probably be more specified. I would have no idea if I only had a recipe. I highly doubt seasoned bakers are going to buy this cookbook, so specifics are probably needed.

As an Australian, where a pavlova is more common...it's funny saeeing the glowing reccomendation of citrus fruits. I feel like it's fairly rare to see them served with citrus? I usually see them with berries or peaches or chocolate even. ASlso, layered pavlovas are a thing.

Yeah it confused me too, Ive never seen citrus fruits on Pavlova,, usually it's kiwi fruit, strawberries, raspberries, blueberries, sometimes with mangos and peaches if your fancy,,,, but citrus?? I was baffled

I think because citrus is a winter fruit however stone fruit is a summer fruit so we tend to use what’s in season around the time we eat it (usually around Christmas/summer)

I found it really funny at parts because it was really, not wrong exactly, but totally out of what I would call normal; like sure the pav isn't tall but I don't think I would ensure it was short, or how Ariel was talking about making the fruits thin so you taste different parts - I think your piece falling over is just kind of part of it. It just kinda screams American.

there’s a part of me that wished zach just never realized he was supposed to have whites not full eggs just to see what happened during judging and how long it would’ve taken to realize edit: y’all ik it wouldn’t have worked and he probably would’ve figured it out not too long after he did but considering they likely had a time constraint, zach probably wouldn’t have had time to redo everything so it’d be funny to see what he ended up with :)

It probably would have turned into more of a custard (think like pudding almost) but without the milk. So... like.... sweet eggy cream, kinda. Cuz it would whip up a little with the egg yolks, just not change shape and texture like the whites do. And the sugar added would add structure.... Yeah it would prob just be sweet scrambled eggs on a baking sheet with some whipped cream on top. (I’m an avid home baker so this just a guess but a good one backed by years of fucking shit up haha)

I will say, I have to agree with Zach about step one being separate the egg yolks. Ive always learned that you MUST make lists very idiot proof and include ANY step. Also agree that list should have said “crack” the oven door. Tiny tweaks but I hope this was helpful for Ned and Ariel 🥰

Y'all of little faith, remember that this video doesn't show us the actual recipe! We only get to hear the guys' interpretation. Maybe they misread something. Maybe they made assumptions. We do not know. :)

Correct me if I’m wrong, but isn’t what Ned showed a soft peak? I thought stuff peaks keep its shape, while soft peaks can stay up, also flop down when you do the peak test?

Immediately came to comments after seeing that. As stiff peak means the tip isn't floppy or moving at all. That was a soft (maaaybeeee a medium) peak.

From now on, all cookbooks need to be “Zach approved” (like a special certification). My brain works just like Zach’s, and I struggle greatly with recipes. I would love a full cookbook full of direct directions!

Try Guys should do “Try Guys make a recipe without a cake”, where the Try Guys have to write an original recipe for a cake of their choice without any experience, examples, testing, or measuring tools and their SOs have to bake the cakes according to the recipes exactly.

The pavlova has recently been officially declared as a NZ invention. As a kiwi, I and every other NZer, are very passionate when it comes to our National dessert. Named after the ballerina Anna Pavlova in honour of her tour to NZ in 1926. To watch the Try Guys massacre the pavlova is traumatising ( I need therapy...lol). Traditional pavs are decorated with whipped cream and the humble kiwifruit or peaches. More modern decorations include a broken flake chocolate bar and fruit etc. Cracks in the pavlova are usually desirable as it means its a crunchy outer shell with soft fluffy meringue inside. Pavs aren't normally layered, that's a totally different dessert. We all knew how it was going to go. Zach throws the recipe away. Eugene adds enough booze to make an alcoholic go into a coma. Keith gravitates towards raisins ( and cinnamon). Ned just makes a lot of noise ( but not anymore). Can't wait to see what food they massacre next. Must admit though their inventiveness is inspiring.

There is no real official owner of the recipe, it's both Australian and New Zealand. The first recipe was the same thing called a Meringue cake. The name is neither Australian or New Zealand. I believe the first recipe in New Zealand was offered by an Australian, but Meringue Cake is literally just a swiss cake with tropical fruits on it.

Right? For example, I feel like it's actually useful that they caught the "oven door open" thing. That COULD be an issue, if they haven't clarified well enough what "open" means in a situation where getting it even slightly wrong can ruin the presentation. I would call that a fault of the recipe.

I was eating a pav the height of my head when I watched this. Those flat things they are more like a very wide meringue. And the citrus, mint and honey idea, ergh, I dunno the whole recipe doesn't do a true Pavlova justice for how amazing they are.
