So I learned this from another youtube channel that I watch and she has chickens! One of her recommendations is that if you have your own chickens that lay eggs, break them in a smaller bowl and make sure the egg is good and then add it to your recipe!. Sometimes chickens will lay bad ones and we usually don't see them if we buy our eggs at a supermarket so it becomes your job to do that! Good luck with your chickies too!

The color of the yolk depends a lot on their diet! I think changing their diet to something else should help, though I don't know what to change it to though.

The eggs you get from your own chickens should not be washed and you should store them outside the fridge. The natural barrier could get moist in the refrigerator which makes it easier for bacteria to enter the egg. Btw only in the US eggs are in the fridge in the supermarket BECAUSE they wash them before selling. 😂

Yes to washing eggs from chicken coops because of chicken poop sometime get stuck on the eggs. The orange yolks is based on their diet. My egg lady feed her chickens sunflower seeds, spinach, and I can't remember what else. But her egg yolks are vibrant orange and super delicious

It couldn't be more French than that 😍 A good omelette with Boursin and porcini mushrooms is one of the most reminiscent thing from my childhood (my father used to cook perfect omelettes) ! BTW you nailed the eggs cooking, and I agree with you, eggs are by any way NOT easy to cook, they need love and practice ☺️

I've heard that mastering cooking eggs is how they test if you're a real chef or not. I thought you did a great job, but I personally would not put forth that much effort for an omelette...but would have no problems chowing down on anyone else's efforts on it. LOL!

The color of the egg yolks depend on the food that the chickens eat, and often worms and grasshoppers give the yolk an orange color.

I love that you call your chickens the Spice Girls and are going to name them actual spices. How apropos for someone who has a cooking channel. :) I think you should wash them because otherwise, wouldn't you be contaminating things, possibly with salmonella? I would love to see how big your backyard is if you can get drone footage. Do you have citrus growing on your property? If not, you should totally plant lemon trees and such. Or do like all the Vietnamese in CA and grow all kinds of stuff like herbs, peppers, etc. I am so envious of all the stuff I see them grow there.

Orange yolks are a sign of healthy happy chickens. To get this, not only should they have a low stress environment, but also consume plenty of greens that contain carotenoids, Omega-3 such as found in flax seeds, and proteins found in creepy crawlies like worms and insects. All three are essential to their diet for flavorful, rich, orange yolks.

it's a little late but it may be useful to others, but in France the eggs are not washed because washing them removes a film that protects them. that's why in countries where eggs are washed they must be kept in the fridge, whereas in France you can keep them in a basket and save a lot of space in the fridge

Congratulations on the new house and kitchen! It looks beautiful. But I have to admit, I got so used to the camera angle/configuration from the old kitchen, something feels a bit “off” with the camera angle here (not at the range, but at your main presentation counter). A lot of the counter is cut off as well in the frame.
