The reason for the well is because you want to avoid the liquid touching the surface of the bowl. You want it to stay only in contact with flour. That's because if the surface of the bowl gets wet, flour starts sticking to it and you'll have a hard time scraping the flour off of it. If you make a well, it's easier to avoid, especially with thick yeasty doughs.

The way my mom explained to me the well is a way to keep your wet ingredients together and your dry ingredients somewhat separate without using a second bowl. You can mix the wet ingredients in the well first. Once the middle is mixed you work outward and slowly fold in the dry ingredients in. Hope this makes sense

Yes it always sounds sexual to me too. I’m a massage therapist so whenever I accidentally put too much lotion on a client my brain immediately goes OH NOOOOOO when I hear the gross sound lol. And that’s what goopy pasta reminds me of too haha

1:00 Sam is SUCH a great recipe developer and seems to be an amazing human being! I am a big fan of her Italian seitan meatballs and have used that concept to make a wide range of different "meatballs" for my non-vegan fam who (not keen on most meat substitutes) loves them! Highly highly recommend!

20:40 Actually for baking the weight is always so much more accurate than cups it really makes a massive difference in the end result! Many people overdo the dry ingredients and end up with super dry baked goods because they scoop the flour etc directly from the bag while the measurements are usually given I fluffed up flour, scooped spoon by spoon into the cup. All in all, a big advantage of living in Europe where everything is just given in grams as opposed to cups :P

It is, Chloe made a video with this recipe years ago: kzbin.info/www/bejne/jIWTZ6GqrbN0o6c I recently tried the one from hotforfood with white beans and cashews instead of tofu and it's even better (cheesier) and my new favourite but I made it more chunky like Chloe's recipe (I blended everything except the artichokes and wilted spinach then I added those and pulsed until it had the texture I like) I can highly recommend it: kzbin.info/www/bejne/b5bOeaiPg6iJbrM I love food that's healthy but tastes unhealthy. 😆 Btw Lauren from hotforfood also has a recipe for a cold spinach dip (made with tofu).

How funny... I just made Caitlin’s Fudgy tahini raspberry brownies today too. Only I didn’t have raspberries so I used frozen cherries but it was very good. 😋. The only thing is I just mixed it all but the chips and berries in the blender once the oats were blended into a flour. Then I stirred the chips and berries in and poured it all into the baking pan. Easy peazy. 😃. It was fun to see how you did it too though. Thanks. 😁

I loved Chloe's spinach artichoke dip until I tried Lauren's (hotforfood) version with white beans and cashews instead of tofu and it tastes even better (cheesier), I'm addicted! It's also easy to make, I blended everything except the artichokes and the spinach bc I like it chunky like Chloe's recipe. 👌😋

Does anybody have tips for me to use up soft silken tofu? Not a big dip person (and not a vegan) but I bought tons for sundubue jiggae (sorry if I butchered the spelling) and the shelf live is shorter than I expected.

yeah canadians are VERY confused with our measuring system. sometimes we use the US system, sometimes what everyone else uses. For instance, we use feet/inches for height but we use KM on roads. We use Fahrenheit on ovens but our weather is measured by Celsius.... wtf is wrong with us LMFAO

I need to find a cookbook author who hates nutritional yeast as much as me. 🤨 I wish I liked it, but I just don't. The Mac and cheese, as well as the spinach and artichoke dip, looked great though.

I wish I liked nutritional yeast but no matter what I put it in I can’t handle the smell or taste of it!! Maybe I just need to keep trying it out in different recipes. Do any of you find the taste to be overpowering?

I hate it as well! If there's more than a teaspoon of it, it renders the entire recipe inedible (and if there's that little in it, I can usually just leave it out!).

They didn’t brown most likely because they weren’t in the oven long enough, if you wanted them to brown you could bake them longer but that might make them dry. You could replicate an egg wash (which is what makes baked goods brown and shiny) by using milk (soy would probably be best), coconut oil, melted vegan butter (which is essentially oil) or I’ve even heard you can use aquafaba (the water that comes out of a can of chickpeas).

16:55 I can never understand those who like almond milk in coffee, tea, cooking, oatmeal...maybe the homemade one, but the store bought ones are always so watery and that almond extract which they sometimes use is always so artificial too me ;P

always confuses me that you think regular parmesan cheese "stanks" and yet you use nutritional yeast. I've tried 3 brands of nooch and all of them are hideously stinky in flavor. Like the rankest nasty blue cheese funk with a massive dash of limburger cheese awfulness. I've don't get why vegans love this stuff so much unless they are all blue cheese nuts because other than that it does NOT taste like cheese whatsoever. I will say I've been cutting down on my meat intake and some dairy items, I even made vegan mac-n-cheese last night. It was ok, but that nooch stank just kills my tastebuds totally. Thank you for the video and the new recipes to try out.
