For anyone who wants to know exactly why it went wrong: For the strawberries: The water was too hot when it was added to the pan. Too much evaporated so the ratio to sugar was wrong. Also, it should have been cooked longer. If you want a deeper color, add a litttle bit of lemon juice (preferably concentrated and i'd say 1tsp-1tbs). This will help with caramelization, and no, it's not going to taste at all like lemon. Concentrated lemon gives you a common denominator every time you cook this recipe, because with real lemons, the acidity and taste is never going to be the same across lemons. For the garlic: It should have been roasted separately. What I would have done is chopped or pureed the garlic, roasted it a little bit on a pan with a bit of olive oil and a dash of sugar so it gets nice caramelization. For the yogurt things: Number 1 rule of frying: NEVER ADD NEW OIL TO THE PAN WHEN YOU HAVE FOOD ON IT. Unless you absolutely have to don't do it. Add more oil in between the batches. What happens is, you're drastically lowering the temperature of the oil in the pan, so your food is not going to be as crispy. It's going to absorb the oil and become greasy and therefore a little soggier. It will also take longer to cook and the consistency won't be as even. That's why the inside was all weird. More oil should have been added in the beginning, but honestly that amount of oil might have been enough (hard to tell from camera angle). I love cooking, and I have made many mistakes before and RUINED meals. Cooking is an art, and like all art, it takes practice to get better! I love watching cooking shows, and those help with improvement as well. Great first attempts! I want to try making vegan fetta now. It seems like you aced that meal! Great video! a lil suggestion from a fellow Italian: don't chop up the basil on the cutting board, most of that intense flavor will get stuck on there. It's better if you rip it into pieces with your hands directly into the dish/casserole/pan/pot/whatever

for the candied fruit, too much water evaporated when you put it on the hob, that's why your sugar didn't have enough water to properly melt x it should have just been warm, definitely not bubbling, when you put the water in and then the sugar :)

I make candy every year and I disagree. I think the problem is you stirred it with the strawberries. Stiring causes sugar crystals that get stuck on the side of the pan to crystalize the rest when you stir them back in. Adding a drizzle of corn syrup makes it not so finicky and won’t crystalize as easily.

For the donut recipe, I believe it calls for self-rising flour, not solely AP flour. The acidity in the yoghurt would react with the leavening agents in the flour to give the donuts some rise.

The tang hu lu is a very famous Chinese street food item. You need to stir the water and sugar in a cold pan before you turn on the heat. You really need to wait for the caramel to turn like caramelized onion brown. Then you turn off the heat and when you dip the fruit in. It does stick to your teeth, and is actually quite annoying to eat, but It’s kind of like creme brulee; hard caramel shell, then soft fruit.

I chop the garlic (I double or triple the amount of garlic) and sprinkle it on top of the tomatoes before baking. When it comes out of the oven I mash it all with a potato masher, then mix pasta in. It’s one of my son-in-laws favorite dishes

You are such a delight to watch! Love your videos. FYI a universal rule of deep frying/shallow frying is that you have to let the oil get to the temperature before adding the food to it. Reasons: - When the temperature is hot, the food doesn’t absorb as much oil. - The high temperature causes the gooey centres to be cooked through hence giving you the crispy outside and creating the right textures…yum!

I always love your videos! They’re always so fun to watch and helpful. I’ve made a lot of vegan candy, like candy corn, snickers, butterfingers, 3 musketeers, etc haha, and next time 1. Add either lemon juice, cream of tar tar or corn syrup. They’ll help keep your sugar syrup from crystallizing like it did when you dipped the strawberries. Sugar is super finicky 🙃 2. Combine the sugar, water, and lemon juice/corn syrup/cream of tar tar in the saucepan and then bring it up to temp. I usually put it on medium heat. You’ll get the golden brown color (caramel stage) anytime between 15 and 30 minutes. 3. Stir your mixture until it starts to boil. Then, don’t touch it. You were right on that one. Then, wipe the sides down with water and a pastry brush to get the sides of the pan clean from sugar crystals. That could have also been why it crystallized. We’re about to get nerdy here. 😂🤓 but you’re breaking the sugar crystals into smaller pieces when you boil it. But the sugar crystals don’t like that. Like, at all. So they’ll find any and every “excuse” to go back to the big crystals. Hope this helps and I didn’t bore you to tears with this novel. 🙈

Rose, I didn't read every comment so sorry if this has been said, but- my husband is a chef and has always said to cook your onions and garlic as far as you want it to cook before adding the tomatoes because once the tomatoes are added it halts the cooking process of the others. I wonder if cooking the raw garlic with the tomatoes was an inherent problem with the recipe?

@@CheapLazyVegan shallow fry is not the problem. You did not let the oil heat to popping. You should have used more oil, heat it up and if, when you sprinkle water over the top, it pops, then and only then is it ready. The oil should cover half of the donut so you flip once and it's done. Also, never ever add more cold oil while cooking. This essentially ruins the dish you are frying. We make homemade donuts at home and have since I was a kid. Its something we do with kids to teach them how to cook in the southern states. Deep frying is definitely a southern tradition and definitely not healthy so don't worry too much if you haven't mastered it yet.

You needed to blend the feta, the tomatoes and the garlic after it came out of the oven. Then you pour it over the noodles. The whole cloves of garlic and whole tomatoes don't make a good sauce. You also don't want to cut down the olive oil in a recipe like this one. The olive oil is where a quarter of the flavor comes from in pasta sauces that use a large quantity. The first time you make a recipe you should always follow the instructions precicely, measure everything accurately etc. The second time you make it then you can make adjustments. All that oil also would have helped with the garlic. Just a helpful tip.

I think the coconut milk yogurt is a lot different than regular yogurt since it has almost no protein. You may want to try that one again with the new Protein yogurt from Kite Hill.

Working with hot sugar is such a nightmare, like in general. And for tanghulu especially it seems. I have yet to see a video where anyone managed to recreate the types of hard crunchy transparent sugar coating I've seen in China. But hats of for trying to make it without a candy thermometer.

The candied fruit didn’t work because your heat was too high. You need to be less impatient and use a candy thermometer. Also the donuts didn’t work because pan frying is absolutely not the same thing as deep frying. If the food isn’t floating and is touching the pan in anyway it’s not deep fried

THATS NOT DEEP FRYING. DEEP FRYING IS WHEN YOUR FOOD IS FULLY SUBMERGED IN THE OIL, FRYING. THOSE DONUTS WERE COMPLETELY SHALLOW FRIED 😭 ROSEEEEEEEE 😂😭

You should have waiter longer with the sugar, til it got golden. It said not to stir it, but you stirred it with the strawberries. Entertaining though 😂
