My friends let me note couple of details here: After dividing the dough into 7, rest for about half an hour. Then Shape and rest 10-15 minutes. Dip into molasses mixture and sesame seeds. Stretch a bit and rest 20-25 more minutes on the tray and bake at 180C for about 25-30 minutes until Golden color 😊

In my trip to Greece,there was a vendor in front of my hotel selling this donut shape and covered with toasted sesame seeds,he sold two kinds,one more toasted and sweet than the other ,sell for 50 cents at the time .that was the most amazing delicious thing I’ve ever had.

I just tested it, made just two of them and came out great. Used a mix of sesame and nigella seeds. Just need to make the molasses mix a bit thicker for a darker color. I used Carob Molasses. Simit is great with white cheese. Thanks for sharing.

I used a Lebanese brand called الوادي الأخضر in English "AlWadi Al Akhdar" I am quite sure you'll find it in Morocco .... if not, you can surely use Date Molasses... the same company makes it or any other brand. any dark Molasses would work, just have to dilute it with some water if it's thick. Good luck.

Simit is very delicious, especially in the morning and all day long with tea coffee Gazoz ayran or plain I like it with tea and one of the kind Turkish Gazoz making it home not very easy but this depends on how good or handy with making a Doug I am not very patient with that but I try few times whenever I have time Simit can be well suits Turkish breakfast table you can eat bread or simit perfectly replaces the bread if you don't have at the moment its firm chewy harder then the bread so I really like it so much

So glad to see you make simit. They are far superior to bagel or Greek bread rings. I brought some back to Pittsburgh from Istanbul, taking them then one by one out of the freezer. Sad when they were all gone as I could taste the city in them. I'll make them again with your methods but they are best from Turkish hands.

Tip: cover you resting dough with bubble wrap, bubble side down. No need to oil, it won't stick! Don't ask me why, but it works
