Ube Coconut Mochi ‘Brownie’

Ube Coconut Mochi Brownie! 🍠 🥥
Ube is really having its moment right now and I’m here for it. Sweet potatoes are so versatile and used in desserts all over the world. Is Grimace just a giant purple sweet potato? 🤔
Recipe Below 👇
Dry Ingredients:
1 454g (1lb) bag of glutinous rice flour
1 1/2 cups white sugar
1 tsp baking powder
Wet Ingredients:
1 cup milk (room temp)
5 eggs (room temp)
1 can of coconut milk (room temp)
1/2 cup melted butter
2 tsp Ube flavouring
1 bag of shredded coconut (unsweetened)
Mix all dry ingredients (except shredded coconut) together in a bowl.
Beat eggs into milk and coconut milk, add melted butter, and combine wet and dry ingredients. Whisk until batter is smooth and then add in Ube flavouring. Mix shredded coconut in last.
Pour into a parchment lined rectangular (9x11) pan, and bake at 350 for 50-60 mins until top is browned.
