A while ago ( 1962 ) I was the delivery kid for a Chinese restaurant, watching these cooks brings back so many fond memories of watching the meals being prepared. So many things happening at once, and the prep work before opening is wonderful, Thank you for the video, and the memories.

@@tinytim9453 Japanese Chinese chef here. When working with woks you are essentially cooking on a small jet burner. The sheer amount of heat dispensed is absurd, and the surface of the cooking area can become hyperheated and warp or be damaged without appropriate control. As such we keep water faucets on at all times to cool down the cooking surface, but also to ensure that water we need to prepare dishes doesnt evaporate due to the sheer amount of heat.

So efficient, really like the water at each location, no having to get rid of pans wait for them to come back, water right there is so good and at the back a recess where liquid can be discharged, I never saw this system before it is really clever. Very precise cooking, the guy's timing, the flaming of dished gives it added flavour and the very hot temps allows for very healthy vegetables, etc., not overcooked. Impressive.

This setup is common in Chinese restaurants. The water also serves to keep the stove cool. Without the water, the stove will over heat.
