I can’t decide so I warm up half of the brownies I eat and the other half I leave them cold. Cold brownies from the fridge are crunchy on the sides!

I've told many people that your brownie recipe was what got me started in baking. These are some great tips I did kinda pick up from making this recipe. I also find brown sugar makes brownies moist and that helps to make the difference. I baked and gave one of my college professors a copy of your Best-Ever Brownie recipe before I graduated. She was so intrigued by my baking after seeing me give one of my best friends in her class brownies to eat.

I love Schaffenberger's cocoa powder. They also have bars of bittersweet that makes life delicious. Good chocolate does make such a difference. Counting the day's till your cookbook comes out. I wish you well.

Your brownies were amazing❤ Since I used Dutch processed cocoa and I used Dark chocolate chunks.. they were slightly bitter. So I guess using milk choc chunks would've been perfect... anyway amazing recipe❤

Thanks for all these great tips, Gemma! I have a question though - the majority of brownie recipes tell you to beat the eggs and sugar together first, whereas yours doesn’t. What is the difference in the end result?

Great question! The process of creaming eggs, sugar and butter is about creating air. The whipping gives the mixture the air bubbles that make baked goods fluffy. In mixing melted butter, sugar and eggs, you do not get that air in, which makes it a denser, chewier product. My Best Ever Brownies are real fudgey and not cakey. I've never baked brownies more than 20-22 minutes. They set up better if they're underbaked and then cooled. No extremely hard edges and the middle is so fudgy soft. I've used your recipe and they never last long around here.

Hi Gemma!👩🍳 I feel like such an Insider with these Pro tips!🙆♀️ I love your brownie recipe! Its tried-and-true in this household. The only thing is I have to make it when no one is home LOL! Otherwise it will never have time to set. I love the tip about warming them up a bit. Oh, Gemma I do know the disappointment of over baking a brownie. When I was younger and I first started baking for my brother and sister without my mom , around I saw that the middle looked uncooked so I kept baking.🙄 I think you know how that story ended. Two very disappointed younger siblings. At least, it was June so we made ice cream sundaes. Thank you for all of your tips and for your secret best of recipes! PS - Ghirardelli is the best!❤💚❤

I recommend you bake and then freeze them. You can also place it in an airtight container and place it in the fridge. Brownies have long shelf life, but they're usually consumed way before they get to spoil.
