Hi dear. For whipping cream is best to make when you're ready to frost the cake. Usually after refrigeration, the cream will be harden and rough, you'll need to add more cream to mix to get the right consistency. It's a little more cream needed to waste. However, for easy make ahead cream will be buttercream. Hope I answered you

Hi dear. The trick is do not over whipped. Whipping cream will turn curdled like a lump which look like butter if you over whip. Just whip it until the cream is stiff, and you'll have to stop
