I won’t lie...I love dipping veggies like these in a gooey spinach and artichoke dip (my sister made an amazing one this year), but yes, I think it’s ideal to front load big holiday meals with healthier foods. We made succotash, veggie platter and cranberries to contribute to the pot luck this year. I’ve been making the veggie tray since my early teens and love making them as a creative outlet. I am watching and taking notes!! I do a veggie platter almost every Shabbos. But I think I'm doing it all wrong. What I need is LAYERS and GREENS. JewishEducationatHome oh you make me so happy! Sounds like we’d be happy eaters in your house! We’ve been eating on ours all weekend too. Since I keep the dip on the side, all the veggies stayed tidy or could be rinsed and put away after the first big party. The chard eventually gets tossed in a pan and cooked with garlic and the potatoes can be used up/fried in the morning with eggs. I LOVE having a lot of veggies ready and washed! The layers certainly aren’t necessary, but they sure are beautiful. Also, my carrot tops (or sometimes the outer leaves of my cabbage or lettuce) then don’t go to waste - they make the other vegetable colors really pop. Carrot tops eventually went into the compost, but that’s been the only food waste aside from peelings. Do you kids enjoy the green veggies like blanched broccoli, asparagus and string beans? My brother couldn’t stop talking about them. They were totally his favorite - cooked but still with a bit of crunch. Xoxo and happy cooking, Chana! 😘

@@LittleKosherLunch NO my kids DO NOT enjoy broccoli or asparagus! They like green beans. Unless it looks exciting and pretty, they would rather STARVE than eat something healthy. It amazes me every time to see your kids eating healthy foods!!! Such a blessing!

My kids also like to make a "snack plate" for Shabbos lunch, with veggies, fruit, dried fruits, dips (ranch, hummus, salsa, guac), crackers or pita wedges, sometimes cheese or peanut butter or hard-boiled eggs. You can make it quite elaborate and beautiful -- it's a great creative project for kids, and it can be assembled on Shabbat if you keep fresh veg and dips on hand.

Tanzy Thress thank you so much, Tanzy! These platters truly feed so many, for so little, fancy carrots and all! We were 35 for thanksgiving, and we are now eating off the leftovers at every meal, and the chard will get cooked for Sunday supper this weekend. My goal is always to stretch our dollars but also have something healthy and delicious! My brother raved about the green beans and asparagus, so he got to take all of those home in his takeaway bag. I hope you had a scrumptious holiday!
