When I was growing up, my mom's best friend was Italian, and she taught us this tasty and easy-to-prepare dish. For a family of four: Boil about six potatoes, cool, and cut into bite-size pieces. Slice 1-2 green peppers and 1-2 onions. Cut about 8 sausages into small pieces. Combine all these, top with a little olive oil and garlic slices and leave in the oven at 350 for an hour. Stir a few times while cooking. That's all there is to it! This dish is extremely flexible: You can increase or decrease all the ingredient amounts to fit your taste, and it always comes out delicious. Today my family is all vegetarian, so we use veggie sausages for this dish and it's still incredibly delicious!

I make something similar. Cut up potatoes, red peppers, onions, tomatoes, garlic in big pieces so it doesn't burn, or whole cloves of garlic. Pour some olive oil over everything. Roast it all for about an hour. It's really, really good.

Thank you Lisa!! My easy go to 3 ingredient dinner...chicken breasts pounded til they're ~1/2 to 3/4 inch thick, dip in beaten eggs, then coat with crushed French's dried onions. Bake at 400°F ~20 min or until onions are lightly browned. I always serve with baked sweet potatoes or a "baked potato bar' and a salad. Enjoy!

All your dishes are wonderful! I will add that a variation on the sheet pan method is foil packet cooking (e.g., en papillote). The difference is individualized portioning, more steaming than roasting, and you make the sauce inside the foil packet with the addition of butter, wine, stock, or another condiment. Cook in your oven or on your backyard grill. Cleanup is also easier because you can toss the foil and not worry about washing the sheet pan. What works well for me is making a habit of cooking one thing each day, even if it is not an entire meal, but contributes to a collection of ingredients in the fridge or freezer as the week goes on that can be mixed & matched. Some days are simple preps of a roast veggie, browning some meat, or making a starchy pancake or noodles; other days are more elaborate with a lot of time at the cutting board or baby sitting a slow-cooking pot. Over time, all the components individually are good for a tiny meal or snack on the day, or assembled into a more creative, complex dish later on.

One thing we grew up with and so fast. I know you will laugh but my mom. made the best mortadella sandwich. 🥪. It was simple but we would have salad or potato croquettes. Those were sometimes called lazy Sunday. But you can imagine the mortadella was so freshly thinly sliced. And with a lot of my mom’s pickled green peppers. 🫑. Just so tasty. 😋. Miss those days really 😊
