I tried making fried rice today using advice from this video (it came out well for a first attempt, thanks for asking) and eventually came to realise that while I may not have Asian ancestors to guide me when cooking with feeling, Uncle Roger himself is all of our Asian ancestor, his spirit telling us when the MSG and sesame oil is enough, and crying at me when I forget to put the eggs in until everything else is almost done.

In my experience, chefs want to provide a good result and usually go for it with all the prejudice they have learned. Especially in Europe, people look down on MSG as some people don't handle it well and most consider it synthetical. So many think, it is more authentic to leave it out, until Asian people tell them that that's wrong, because if you don't use MSG it's not Asian.

Most peanut oil used in cooking doesn’t actually have the protein. I’m allergic to peanuts but I can still cook with the oil. If you have a really sensitive allergy then it might be different.

Uncle Roger you have to try this variation. Start with cooking bacon in the wok. Get it crispy and break it into small pieces to get added later. Remove some but not all the bacon grease. Substitute the bacon grease for your peanut oil. Do everything else you do for egg fried rice. Add the bacon bits and stir. You now have breakfast fried rice.
