As an artist (not a cook or chef or anything, though I'm learning), chalking up results to "talent" discounts all the practise put in. One quick expansion to what Uncle Roger said. "Kodawari" (拘り) means "obsession, fixation, pickiness," and it can also refer to a restaurant's specialty. "Kodawarinuku" (こだわり抜く) means "to refuse to compromise on quality." That's probably closer to what Uncle Roger means about the Japanese desire to strive towards perfection. (But, I'm not a native speaker, so there are probably nuances and connotations that I don't fully understand.)

I love how wholesome and just impressive that episode was. It's such a difficult dish to make that even Uncle Roger can't help but be impressed by a result that is not perfect, by Andrew I think his name was, his attempt. And then Chef Motokichi... Very fitting that he would get an Uncle+ title. My jaw dropped twice during his performance, when he first did those really crazy tosses, without even looking at the pan, really, and just catching everything perfectly. And when he tossed the omelet onto the plate through the air, and it landed and split by itself perfectly... It's like beholding a divine miracle, or something. Absolutely incredible!
