I have heard a theory that states Ungoliant was the reciprocal of Tom Bombadil. Just as no one (not even The Wise) knew where Tom came from, or how long he had existed so it was with Ungoliant as well. Personally I think Ungoliant was the most powerful of The Nameless Things, spawned neither by Melkor or Eru and his Children but born rather of the disharmony that he created. She allied herself with Melkor in the beginning to destroy the Trees, but betrayed him instantly and nearly destroyed him. By then Melkor had weakened himself considerably (taking on a physical form and pouring most of his Power in to the corruption of Arda). Whatever she was she was among the most powerful and most evil creatures in Tolkien's Lore.

This has given me something to think about... Also, I believe Tom is the avatar of life and the natural world. Ungoliant as the opposite would be the avatar of death and the unseen world.

There is nothing in Eä that wasn’t made by Eru the Creator, Tolkien’s made that clear from the very beginning. This isn’t Lovecraft’s indifferent and cold universe we’re talking about here, both Tom and Ungoliant’s true natures are left ambiguous purposely by the author but that in now way implies that aren’t in fact creatures of Eru. They might have been eldritch (and yes I’m intentionally using that word here lol) beings who were created even before the Ainur by God hence why they are a mystery even to the Valar or they might be personification of both order and chaos but that’s about it, anything beyond this would be uncharacteristic of Tolkien’s worldview and beliefs upon which he wholeheartedly build his wonderful universe.

That Morgoth was already pretty weak to begin with , and 7 balrog did make her flee, When Morgoth first approached her in her base form she was scared of him cause she previously betrayed him, after getting a huge boost from the trees and Morgoth also giving her some of his power in order to be able to drain the trees she became more powerful than him, so it was pretty unfair situation, point is base UngoliantEven more weakened Morgoth , Boosted Ungoliant

you probably have not read the books. The scene you're most likely referring to was actually written in the Two Towers book, not Return of the King. Peter Jackson took liberties upon himself and reordered events within the Trilogy to suite his filming. If you have not read them, I definitely recommend that you do! They are a rather hard read if you know nothing of the Lord of the RIngs universe, but since you've seen the movies, they should be a much easier read.
