the trade off it that the plates go for about 80-120, without drinks. I worked in an upscale restaurant for a few years, and its actually hell. Getting to work with the highest quality ingredients and not getting rushes is nice, don't get me wrong, but if you fuck up, you are done. We had a strict dress code, no tattoos were allowed to show, no music or cursing in the kitchen, white gloves test every single day before service starts, zero tolerance for tardiness or being hungover, no smoking, even on breaks, hair nets or elastic hats at all times, no meals prepared in the kitchen for staff, and the entire kitchen was deep cleaned every night. Out dishwasher wasn't even allowed to listen to music on headphones, even after we were closed. Its a brutal environment,

@@Et111thompson I went to an upscale restaurant in Denver with a friend we were definitely out of place. Everyone was dressed well and such and I'm there in the Iron Maiden shirt with jeans and work boots. I got an $90 10 ounce of some kind of meat don't remember but it was good. Definitely didn't blow me away but the sauce they used was better than the meat itself. My Friend got some kind of tortellini or ravioli kind of dish, so much for people saying it's for the experience I hardly remember much.

The way they explained it was kind of like sparkling white wine vs genuine champagne. So it’s beef that is raised the same way with the same great comfy life and all, just not in Kobe Japan. Hands down the best steak I’ve ever or likely will ever have by a country mile. I could cut it with my fork it was so tender. Of course it was also a $51 steak a la carte.

As a chef i wouldve rubbed the salt in the meat earlier so it could absorb in the meat better and not only the surface of the beef would be tasty. Also, meat like that should rest 5-10 mins after cooking before serving or cutting it so the juices will absorb in the beef and wont come out untill you bite it.
