My youngest daughter made a comment to me about how much she loved the taste of the vanilla in some squares that I made. It smells wonderful , tastes great and I am over the moon that you put this. Hello John. Love your videos I have been binge watching them. Thought I’d comment on this one as I’m somewhat well versed when it comes to vanilla extracting. A few things for an even better outcome next time! For Vanilla to be considered pure vanilla extract as per FDA standards there needs to be 13.35oz of beans per 1 gallon of (min 35%vol-70 proof) alcohol. A simple rule of thumb would be 1oz (28g) of beans per 8oz (1 cup or 236ml of alcohol. This is the minimum standard for true single fold pure vanilla extract. For double fold or triple fold would just double or triple the weight of the beans per 8oz of alcohol. Between 1.5 & Double fold imo is the perfect medium between strength and cost. Whilst cheap vodka is fine. I have noted over the years an alcohol bite to a lot of home made extracts. To reduce this I would spend a little more on something smoother like Captain Morgan’s White rum / barcardi rum, or even a grey goose etc basically I refuse to use any alcohol that I cannot stomach a neat shot of. (I’m no drinker) as that baseline will always be there and some cheap vodkas can really burn and be harsh in the end product. Aiming for 70 proof alcohol (35%vol) will also result in a more smoother end product. My favourite so far is captain Morgan’s coconut rum once extracted you will not taste any coconut just a pure smooth vanilla extract that you can drink from the bottle its so good. All the best

I was in Sorrento in southern Italy and had dinner with a local family and they told me how to make Lemoncello using the same kind of technique. You use sugar, grain alcohol, lemon skin peels and let it soak. It makes an excellent drink which they sell by the boatload. It's very similar and excellent on a summer's night after dinner drink.

John, thank you so much, once again. My pantry is now full of little amber bottles aging in the dark. I've found some absolutely amazing flavor pairings -- you're certainly right about vodka as a neutral spirit, but there are fascinating deliberate flavor profiles to explore, too, with rums and brandies. I have a few bottles of Cruzan blackstrap filled to double-fold strength (~50g beans per cup of rum) with Mexican vanilla beans from a farm in Rosarito I used to drive past, and it's really opened my eyes to just how much one can *do* with conscious pairing of spirit with bean. I never would have taken up extract-making, if not for you! Also, thank you for making clear (by example) that a very small bit of white pith left on the orange peels is not a crisis. I can never quite zest an orange truly pithless, but with practice, I can manage results similar to your own -- and if they're good enough for my Sunderland sensei, they're good enough for me! Two lovely, organic-sourced local oranges are mellowing in a bottle of brandy now...I can't wait to try them, a year later. I also have a bottle of local blueberries mellowing in rhum agricole -- they were slow to release flavor, but after a few weeks, suddenly, the color changed and the scent went from "rum" to "heaven." You've changed my life, John. You've brought me back to the kitchen, after twenty years away. Thank you so much.

Dear John, I see that this video was posted awhile ago. I'm watching this from the countryside in Paris, France on the 15th of March 2020. We've just been put in lockdown due to this virus. It's so strange to have this health threat on such an exceptionally beautiful Spring day. Thank you for this video. If I find such lovely vanilla beans I'll surely make your recipe. Hi, Isabelle! I’m in the same situation here in upstate NY. I can tell you for sure that this recipe works. I’ve used the same recipe as John has shown us. I’m going to make the orange-lemon extract. I’d already planned to make extracts when the pandemic hit us. I buy my beans from Vanilla Products USA or Slo Food Group on Amazon. Both are reliable with good products. I buy both Madagascar Bourbon beans, and Tahitian beans. The Tahitian beans have a spicy, cherry note to them. Tahitian vanilla lends a more exotic flavor to chocolate! It’s also good in bread pudding. I hope you stay well and that your country rebounds from the pandemic. 🙂

Hi John My dear old Gran used to do this in a similar way. She used to put the Vanilla (split) pods straight into a bottle of Vodka, I think she said that about 15 would do it. She would then wrap the bottles with a couple of sheets of newspaper, then she would put the bottles in a cardboard box and place them in a dark cupboard upstairs. She would do this in January so that the Vanilla was ready to use in time for her Christmas baking. As you say, John, it really is a pure quality vanilla extract. I have not made any for a while now, but after watching this I am going to start a bottle or two this week.

Thanks cliff, your Gran is/was a very wise lady. If you do your own extract Cliff be aware that since I made the video prices of vanilla pods have gone through the roof, but it's still a lot cheaper than the watery stuff from the stores, because they have to pay more for the pods too. I found the best place to buy them is online auction sites and online stores.

Mr. Kirkwood, After your suggestion I watched your extract video again. I've got my lemons, oranges, bottles and vodka all set to go. Brown glass bottles are difficult to find here, but the extracts will all be stored in a closed cabinet or pantry closet, so exposure to light will be limited. After seeing the wonderful color of your mature extract I am all prepared to try this project. Thanks for the great video!

Hope your recovery goes well. All the best John! Vanilla pods must be much cheaper in the UK than Oz. A single miserable-looking pod in a packet at the stupidmarket was over $6 here. I have been doing this for years, you should try coffee beans and also coconut flakes, these make excellent extracts too. Just soaked in vodka for a few months and the resulting extracts are excellent for cake making.

It has been impossible to buy Vanilla extract in all forms apart from the cheaper essences since lockdown as you will be aware. I did however manage to pick up some Vanilla Paste. I made my vanilla extract earlier this year....same way as you. Now I must try the citrus version, even though I'm not sure what to use it for lol!!! love home made stuff like this. You are the best, love watching your vids....thank you! x

Hi John, Genius - I have been making my own vanilla extract in a similar way for a while now, but why oh why didn't I think you could do it with other aroma foods - Genuis - I am so making the Orange extract as I use that a lot over christmas, & Ginger - GInger! brilliant - also going to make that this christmas for next year ( spend most of my spare time up to christmas - cooking, baking and making pressies so this is somethign else to try) I am also telling my father, who is mostly a savory cook, a fantastic cook, but does make the very best chocolate orange mousse - proper chocolate mousse with eggs not cheating with whipped cream as is popular now - and always moans that the Orange extract he gets where he is is not as good as when he was stationed in Morocco. Thank you for these recipes and ideas, you make them so simple, and they are so good.

Thanks John. I've been making vanilla extract and vanilla sugar for years now (vanilla sugar is relatively unknown in the States and it's one of my secret ingredients for bumping the yummy factor in my sweet baked goods. ssshhhhh don't tell! 🤫). I really love the intense flavour that you can get just by letting the stuff sit for a couple of years. I'm definitely going to give the orange/lemon and the peppermint a go. 👍

My bottle of vanilla vodka fell behind my lazy Susan and stayed there for 3 years until I thought to try and get it out. Had my daughter get behind the shelves to get it out. We call it double V ( vanilla vodka). I used the cheapest vodka too.

Hello John I hope all is well? I have just made this recipe, it is in the back of a kitchen cupboard now till after Christmas. I bought the vanilla pods from Amazon for £8.95. I notice a lot of comments saying it is too expensive to make but they are pricing it up at the supermarket which is a rip off. Only issue I have now is do I make some of your lemon and orange extract with the spare vodka, or do I just down it. Lol.

There is absolutely nothing like homemade vanilla. I made a huge bottle which was quite pricey but worth every penny if you enjoy baking. Unfortunately my grandson picked up the bottle and dropped onto my tiled kitchen floor. It was old mature and so wonderful. I think you really must wait a year or so to get the very best taste and aroma. I'm making another large bottle which i will guard very carefully. Going to make your orange and lemon version too. Please tell me how do you make your peppermint one. Is it with fresh mint leaves I wonder. Thank you

Hi John, I hope you're keeping well. I'd love to make this but vanilla pods are really expensive. It's £6.49 for two in my local Morrisons, so 10 would cost £32.45, and adding the £9.50 vodka, it would cost £41.95 in total. I appreciate that the amount made and the quality and longevity of it make it cheaper in the long run, but I imagine most people would not be able to afford to spend so much in one go. Nevertheless I enjoyed your video and am a fan of your work. It's great to see somebody from the North East doing great things. (I'm from Middlesbrough) All the best Rob

Thank you for sharing. John, you mentioned that the commercial vanilla has 35% alcohol. What is the other 65%? Also, I was not aware that alcohol was used in the making of vanilla. I use vanilla every week for some recipes, and will definitely try this recipe. I will also try your french baguettes. I will need to visit your page more frequently.

I got tried of spending $4 for glass of Tea from Starbucks. I recently made my own hibiscus tea. It's really goood. I was thinking, you add a little splash of the extract to a batch.

Thanks Liz, just follow the recipe to the letter, measure all the ingredients with scales and use proper bread flour, and you will get good results straight away, it just takes a little practise to handle and shape the dough, good luck and let me know how you get on, thanks for watching.
