VEGETABLE JALFREZI
Preparation time: 15 minutes
Cooking time : 25 minutes
Serves : 2-3
Course : Main
Cuisine : Indian
Ingredients
2 tbsp ghee
½ tsp cumin seeds
1 medium, onion, chopped
1 tsp ginger-garlic paste
1 medium tomato, chopped
splash of water
½ cup carrot, cut into batons
½ cup cabbage
2 tbsp butter
salt to taste
¼ tsp black pepper, crushed
½ tsp cumin powder
1 tsp red chilli powder
12-15 french beans, cut in half
1 tomato, big cubes
1 onion, big cubes
1 capsicum, bug cubes
¼ tsp turmeric powder
½ tsp coriander powder
¼ cup green peas
100 gm paneer
2 tbsp coriander leaves, chopped
Process:-
● In a kadhi add ghee, add cumin seeds, onion, ginger- garlic paste and cook it properly.
● Now add tomato in it and cook further until tomatoes are soft, add some water and
continue cooking it.
● Add carrot mix will, keep a lid and cook it until half done, now add cabbage in it and cook it.
● add some butter, salt, black pepper, cumin powder, red chilli powder, and saute it will.
● Now add all the vegetables and cook them properly, now add turmeric powder, coriander
powder, green peas, paneer and toss it will.
● Finish it with coriander leaves. serve with roti or rice.

I modified it a little bit. Skipped the paneer (didn't have it). Added some chopped green chillies and coriander stem. And finally garnished with some coriander leaves. Turned out to be awesome

I remember ordering this at a high end restaurant when I was a teenager.. I’d never tasted it before, “jhalfrezi” sounded so foreign and interesting to me. I remember getting so confused because it tasted very similar to my mother’s “stir fry” - something she did when she was in a hurry or had limited options - and asking others to confirm if this dish was indeed “jhalfrezi”. Now “jhalfrezi” is a synonym for unexpected disappointment for me.

I have a similar memory. At that time, going out to a restaurant was a once a month @ best affair and trying vegetables with exotic names was much cooler. It still is, I guess but more in a retro way now. Lots of memories came back, who cares what is right or wrong as long as you enjoyed the dish and I enjoyed watching it just for the love of reliving childhood. Will make it for my kid this week but with some cream & cashews added to this. Thanks for highlighting the sentiment though.
