My grandma taught me her adobo recipe growing up. My dad and I are the only ones that know the recipe. After she passed away, whenever I make vegan adobo, I cry happy tears because it reminds me of her and it's also spot on with taste. Btw, never seen banana with adobo, but I've had banana with fried rice lol.

True, my mom’s adobo is the best! Followed by my lola’s! They both added some sweetness, I assume, to cut the taste of vinegar a little? My mom uses sugar, and my lola used apple cider vinegar, which is genius. Can’t wait to try this version of adobo! I haven’t had good vegan adobo yet. 😆

I learned from Sawa at the Bon Apperit testkitchen that in Somalia they eat a banana at every meal to complimemt the spicy food with the sweet and the creamy of a banana! And fried bananas are also very common In a lot of different food cultures.

The adobo I grew up with was not super salty, but all the vegan versions I’ve made are so salty. My parent’s generation eats a banana with most meals, not just with adobo.

This was really salty because the vinegar was super strong in it, but the revised version on the blog is 👌👌 i am super sensitive to salt so I am usually pretty lighthanded with sodium 😅

Honestly if u want to cook adobo in a vegan way. You cook your vegetables such as string beans or onchoy with the ingredients soy sauce vinegar peppers garlic onions and bay leaf. There's no need for that tofu drumstick. That's a vegetarian way of making it. Its too salty because the tofu might be too salty already.

It probably took so long because the vegan chicken doesn’t have any liquid in it like actual chicken does. Regular chicken adobo, the chicken juices will reduce down and become part of the sauce. I would try to add 1 part vegetable stock to each 1 part soy sauce & 1 part vinegar. Should be done in 30min. Also for a little added sweetness, saute the onion & garlic first til golden brown, then add the soy sauce, vinegar & veg broth.

Oooooooh. My gran's adobo is the best. I can never replicate it even when I still ate meat. But I do make a mean thrice-cooked BADobo. :) I've got about 584 versions of it though. Ugh. Now I'm hungry but we don't have soy drumsticks T_T. Tofu it is.

Before I was vegan, I would make chicken adobo in my crockpot for 4 hrs on low heat. Recipe I used did not add onion...otherwise the same ingredients for the marinade/sauce. :)

Searing your "chicken" may not be necessary for rawness but the Maillard reaction ought to make a difference for taste.

I made adobo yesterday and I didn't had the patience to wait after I boiled it, I put it in the oven on 220°C for 20 to 30 min... It actually worked 😅🤣

I also tried to make "chckn" adobo and it was WAAAY too salty..ended up taking everything out and sauteeing it and eating it with steamed cabbage + rice as a wrap filling lol OHHH I'd be interested in a veganized version of thit kho since there is a lot of fish sauce in it.. Why don't you try putting the peppercorn in like a little tea strainer or herb strainer so you can take it out after it Cooks? Then you avoid the peppercorn bombs!!!
