Baking tip: baked goods come out best if you sift the dry ingredients INTO the wet ingredients! You will only need one large bowl with this method too. Easier clean-up and a better textured muffin :)

Loved the recipe! I baked them with: half chickpea flour, half whole wheat + molasses instead of dates + double the amount of banana and turned out GREAT!! Thx for the recipe ^^

Made these for breakfast today, they were amazing. I didn't use coconut shreds bc I'm not a fan, but they were nice. Not too sweet which I'm not used to, but it's for the better. These are amazing and healthy !😊

My nan uste to make these ( non vegan tho.. ) when I was younger ( I'm 15 haha ) but 3 years ago she moved to Wales again ( I'm in France but I'm Welsh! I have little trouble whit my buckwheat flour. The "water absorption" of my buckwheat flour was in 2-3 times more, than in your video. Maybe I need use 1/2 of cup flour for this recipe. Also my flax meal was more "active" and turn in "slime-yeasts dough" thing.

I made this recipe the exact same way but it didn’t turn out good, the muffins were stuck to the paper and they weren’t sweet even one bit, I guess I should’ve added waay more dates

Muffins look fantastic! I would suggest though to clarify sugar free in your titles. Banana and dates have tons of sugar (even though much healthier than processed sugar).

This is the term used for sugar that is extra - added to food to change the taste - rather than sugar that is naturally occurring. Bananas and blueberries and dates are healthful, packed with fibre and nutrients so I don't see it as a problem especially considering the amount added to the recipe :)

Priscilla Chan once they cooled they peeled out of the papers easier but yeah since they are oil free..etc they are a bit more dense compared to a fluffy light muffin that has a higher fat content if that makes sense!

Hey Tess, I just tried out the blueberry muffins recipe, not as muffins but as a cake. Somehow the dough had a really strange consistency. I left the dates out, because I didn't had dates at home and I took instead of buckwheat flour coconut flour. The cake was almost 1 hour in the oven and the dough didn't get thick. Do you know why this happened?

you might be able to- but then you'd probably want to add in another date for the sweetness lost, or you could replace the banana with applesauce
