I use to take my mom (rip) to this little farmers market in coconut grove for the same cheesecake pie. They did a larger assortment of fruits on top and glazed it. It was fantastic. I'll have to make this recipe, someday.

Looks great! With few ingredients and few instructions, it's a lot more simpler than most raw vegan cakes are to make. I would, however, add some coconut oil to the layers in order to help it set more firmly and when cut, present a little bit more neatly. Can't wait to make it for a late Mother's day present!

Do you just use dry buckwheat? I suppose it should be soaked first to make it digestible. I actually sprout mine and then dehydrate it if I'm making a crust.

I created this for mother's day, and my family loved it! I added some yogurt to the middle base and replaced the top base with a triple berry, (blue berry, blackberry and raspberry), mixture I blended together.

Nice, though I'd use coconut cream instead of banana (which is more like banana cream pie). I also like how you used a grain grout in the base, and not just the almonds. I had the same idea with oat grouts.

Is there a reason why the cashews are soaked but not the almonds? I thought soaking is for softening the nuts, so the blender can process them better

Hmm.. Cashews gives great whipped cream consistency to second cake layer.. But i think that you can change them with vegan soya youghurt or coconut cream and bananas..

The great thing about raw vegan is that everything is really good carbs. I'm not vegan, I'm actually right now on a low carb diet. So I'm just eating chicken, fish, vegatables, fruits and seeds. But I got a mean sweet tooth and a lot of vegan, low carb desserts I saw used flour and were overall baked, which is a no no for me right now. So these kind of desserts just fell from heaven for me. Truly all excellent oils and carbs.

I made it today but it tasted not good. The whole cake only tasted like cashew. It doesn't taste good to be honest.
