I used my tofu cream cheese recipe as the base for the ricotta in this recipe with a couple of minor changes. Then combine it with flour and let is rest for 24 hours to get the most perfect soft gnudi. It's served with an easy toasted walnut sage pesto and vegan parm!

Just made this and it’s really delicious. One of the best vegan meals I’ve made, and equally loved by the carnivores. I made the ricotta one day, the gnudi the next day so it could chill overnight, and the pesto a few hours before serving. (As long as you cover the pesto with plastic wrap so that the wrap actually touches it, it doesn’t brown too badly). Also, because you can do the work over three days, it feels like any easy-prep dish. Thanks Lauren!

Made this tonight. Used a flax egg, fresh basil pesto and blistered grape tomatoes. YUM. Turned out great.

Is not because of the flavour that they use oil and butter, it's because the butter burns easely and the oil prevents that from happenin! Love the recipe I'm defenetly trying it😍

my grandma used to make me a similar dish when i was little, the twist being that it was actually sweet..now that's stupid (and incredibly delicious). you inspired me to try and recreate it vegan style 😍

This looks delicious! In Tuscany, gnudi are specifically made with spinach, ricotta and eggs to hold them together!

This reminds me of something that is very classic in Poland called "kluski slaskie" and it these little balls that are about this size that you later press your thumb into; usually made with flour, corn/potato starch, cottage cheese, & water...I'm sure tofu would be great in it too!

How delicious!! In Russia we have similar dumpling but they are meant to be sweet: syrniki. I have made them with tofu as well but just made them sweet with sugar instead. I must try the savory version.
