Heya! You can use a hand mixer to cream the sugar, butter and almond essence together and then use your hands to mix in the flour. xo

Pre heat your oven to 180C/356F. Bake in preheated oven for 10-12 mins or until tops are just firm and cookie is slightly golden brown. xoxo

Softened coconut oil has worked for me in other recipes, but you need to add a pinch of salt as well. Do you have hard vegetable shortening in your stores? That works as well.

How long do these last once baked? And how long does the dough last if frozen? Can I change the almond to vanilla to make vanilla cookies? And can I add cocoa powder and chocolate chips to make double chocolate ones? Or cinnamon and mixed spice for Christmas ones? I want to make a few different ones for gifts, but being disabled I have to have support workers help. Which means I only have 2 hours a week to do it. So need to make them ahead of time in batches. Thanks to anyone who can help.
