My husband and 2 sons cannot have dairy, eggs or wheat (which is crazy) and I'm always on the lookout for "normal" food that has to be prepared differently. I've had enough years cooking to know that this is GOING TO BE WONDERFUL and I'm going to double the batch! I took a lot of regular sweet potatoes, poked holes in them and cooked them lower than I normally do, at 350 degrees, for not quite 2 hours and they are just going to be perfect. Thank you for the recipe!

What temperature should I set my oven for baking?

Can I make the night before, put in refrigerator heat next day and add topping ? Will it still taste the same ?

Yes!! Then just take it out and bring it to room temp for like 1 hour on the counter and add the topping before baking. Enjoy!
