I grew up a meat eater . For health reasons im trying to go vegan now. And been eating for month now or so of feuit vegetables and grains. Im discovering spices and now im falling in love with the healthy eating now. I am also lowering my a1c and noticing alot of other health benefits now! Better mood. Its wonderful! For a super delicious glaze for the lentil loaf mix: 3 tbsps. Ketchup, 1tbsp. Maple syrup, 1 tbsp. Balsamic vinegar & 1 tbsp. Nutritional yeast. Mix and put on top of lentil loaf. It is so good and I made extra sauce to pour over after it is cooked.

If you are a lazy vegan like me, you can buy the squash already cubed in the freezer section. Or poke a hole in that squash and bake it whole until easy to cut and peel.

I just found your recipe for that lentil loaf and ohmygoodness, it was delicious. The tartness of that glaze reminded me of cranberries, and that loaf was the perfect addition to my plate last weekend when we celebrated Thanksgiving. It was even better the next day for leftovers. The soup looks great I made some yesterday actually of my own recipe and let me give you a great tip.... Cut the butter not squash down the middle and roasted and that way you don’t have to appeal it or dies it or anything! I also roasted a sweet potato and a acorn squash and I did a mixture of squashes if you will lol Along with the onion. I just scooped everything out of its skin once it was already roasted up and threw it in the blender with some veggie stock But that milk looks amazing! I also used some maple syrup just about a tablespoon. Your recipes look really delicious that lentil loaf looks like something I’m going to make it very soon I am just transitioning to a more plant-based lifestyle coming from Paleo and you have been a great inspiration thank you so much

I come from a family of meat-eaters and they love your lentil loaf, collard greens, and cornbread! I doubled the collard greens recipe and still ran out! Your recipes have enough seasonings that hit people’s taste buds the right way, but is very far from bland. Bonjour, I just tried your lentil loaf, cooked yesterday and served cold today like a "terrine" with a green salad and it was just delicious. I just didn't put the celery and in stead of the breadcrumbs I used the same quantity of oatmeal. My non vegetarian guests were just amazed at the texture and taste. Will definitely try more of your recipes. They all look delicious. Going on three years of vegetarianism, I'm more and more interested in trying veganism at least concerning the dairy products and your videos are a great inspiration. Thank you ! Michelle

I got your book "Sweet Potato Soul" and have greatly enjoyed it. My two favorite recipes so far have been your Nana's Sweet Potato Pie recipe and the Tender Mess O'Collard Greens. I've had both of those several times, and they are AMAZING, although I do substitute ground garlic for fresh garlic, because I don't have the patience to peel garlic. It still turned out AMAZING!!! I love the historical background and nutritional info you provide for many of the foods and dishes in your book. It's VERY interesting. I've only tried about a half dozen recipes so far, and have taken notes on each of them, but am trying to try new recipes as often as I can. Thought I would be doing a new recipe every week, but honestly don't enjoy cooking that much. However, it's nice to try new recipes every now and then. I wish that you had approximate prep times, cook times, and yield info for each recipe. I'm writing that down as I go, and can get a sense from reading the recipe, but it would be nice to already have that info there if you write another book. Other than that, greatly loving "Sweet Potato Soul".

This looks delicious as always! So... after years of being vegan and watching my favorite vegan youtubers (including you of course!) my twin sister and I finally decided to start our own Vegan Cooking Channel! We've wanted to make videos for years but always gave ourselves excuses like: "We need professional lighting", "Our kitchen isn't nice enough", "Our filming equipment isn't good enough"... etc. But we finally just decided to hell with the excuses! The predicaments are never gonna be perfect and that's ok! Because our first and foremost objective is to get our recipes out to the vegan community! And hopefully even curious meat eaters. Being vegan is our life and cooking/baking vegan is our passion. There's been so many trials and errors and coming from an ethnic family there have been so many recipes that we couldn't find veganized online so we had to make them ourselves. So we really just wanted to share our wisdom and love and passion with the community that we feel so belonged to. I apologize for the self promotion but we know how supportive the vegan community can be and we think that ultimately there's no shame in reaching out for support. We are just super excited to start our journey and appreciate it if you check out our channel.
