Recipes:
Tofu scramble (I used the Master Class.com for guidance and I've made a few adjustments)
Use firm or extra firm tofu- not the soft or silky varieties
Use 100g tofu per serving
Press tofu on a paper towel lined plate with something heavy for 15 mins or so
Use any chopped veggies you like as you would for an omelette
I used onions, peppers, spinach
Olive oil
1/4+ tsp turmeric (the Master Class uses 1 teaspoon and I found it too much!)
Nutritional yeast (really pleasant cheesy taste!) 2 1/2 teaspoons
S&P
Saute veggies of choice in olive oil
Crumble tofu in a small bowl to resemble scrambled eggs
Add to pan along with S&P, turmeric and nutritional yeast (you could use any spices you like)
Toss and heat through

Chipotle Inspired Bowl
This is so fabulous and versatile! I made it with a Mexican flair but you could swap in 5spice, ginger, garlic and soy sauce for an Asian vibe and top with edamame, pickled ginger and shredded radish or let your imagination run wild!
Lentil and Quinoa base
1 cup quinoa rinsed
1 cup green or brown lentils (the red ones get really mushy)
Small onion chopped
Chopped carrot 1-2
Chopped celery stalk
1 container vegetable broth
1 cup diced tomatoes fresh or tinned
Spices of choice- I used
1tsp chile powder
1/2 tsp smoked paprika
1/2 tsp cumin
1/2 tsp chipotle powder or sauce
1/2 tsp oregano
Bring all to a boil and simmer for about 20 min over low heat until liquid is absorbed
Use this as your base and add your toppings!
The vegan Greek yogurt is wonderful and full of protein
Cilantro if you like it!
Sliced avocado
Finely diced jalapeño
Grilled corn is a tasty addition- @WillTennyson loved it!
5 Ingredient Muffins- Please check out thebigmansworl... for this amazing recipe and many others!
For me, I had to increase the oven temp to 375 and left the muffins in longer than he did. On my second attempt I upped the baking powder a bit as well. These are SO easy. Note: Arman quotes these muffins at 21g of protein per but I think that's a typo! When you add up all the ingredients and divide by 8 muffins, I'd say we're closer to 11g protein. Still an excellent choice!
2 scoops protein powder 64-67g (vegan for today or your usual!)
1/2 cup almond flour
1/2 cup peanut butter
1 cup unsweetened applesauce
1 tsp (or a tad more) baking powder
Blueberries or chocolate chips or whatever!
Mix the dry ingredients together
Add the PB and applesauce and then fold in the blueberries or chocolate chips
Divide into 8 muffins
Bake at 375 (better for me) for 15-18 mins but watch!
Tempeh Parmesan
You won't believe how great this tastes!
I used basil infused Tempe which I bought at whole foods. It's super high in protein, very easy to work with and crazy good!
1 package was enough for both Paul and I
Vegan parm cheese
Pasta of choice
Pasta sauce ( I made a quick homemade sauce with a tin of whole tomatoes I tossed in a saucepan and roughly chopped, added a good dollop of olive oil and some S&P Let bubble away while you do the rest)
Fresh basil for garnish
Slice the Tempe into 2 and then horizontally into 2 thinner slices. You now have 4 pieces of
Pan fry in olive oil until golden. No dredging, egg or flour needed!
In a small casserole dish add a bit of sauce and top with your 2 slices of your Tempe
Add more sauce and a sprinkling of cheese and then top with remaining piece of Tempe (you will have 2 servings- 2 layers each!)
Top with more sauce and finish with cheese.
Pop in 350 oven until heated through and cheese is nicely melted.
Garnish with basil.
I served this with spiralized zucchini and pasta combined tossed together in my sauce. A simple side salad rounded out the meal! Yum!

Loved the video!!! A few ideas stir fry using tofu vegetables of choice and a whole grain of choice. Easy to make and customize. Protein oatmeal with lots of nuts, seeds, and fruit. Pasta dishes using a chickpea or lentil pasta with maybe some tvp and loads of veggies. So many wonderful options.

Thank you so much for this! I’m almost 49 and have been vegan for 20 years. I’m in perfect health, no medications, sicknesses etc. I feel amazing and actually have an eco friendly housekeeping business so I keep busy scrubbing homes 5 days a week.

what a great video mama tenny, love this. i am a long term vegan and for me it's very easy to eat at least 100 grams of protein a day and i'm not even trying but maybe i'm naturally more drawn to foods that are high in protein (i eat a lot of tofu, soy yoghurt, soy milk, also love me a lot of seeds and oatmeal etc.) but it's easy to see why others may struggle a bit as it's adjusting for a while. i think this is a very sweet video. will you please do another day? would love that!

What a great video! I’m 78 years old and a vegan since 2010. I’m taken for 55 years old and not too often, late 40’s.😊 Yes, it’s imperative to keep up the protein along with foods that help our bodies make collagen. You did a wonderful job!!!👏👏👏👏👏👏😀

Great video. The recipes look absolutely delicious. The lunch taco bowl looks so yummy. I am going to give that one a try first. I am not vegan or plant based, but I love to try those types of recipes as a way to increase my fiber and veggie intake.

Loved this! Restaurant quality dishes. 7 year vegan, 64, building muscle with 2 x a week at the gym. Lots of Indian stores and even in Oceans in Mississauga where you can find black salt which is eggy in flavour (but as a finisher as with the nooch ie nutritional yeast)

This was SO much fun to watch! I LOVE LOVE nutritional yeast (or as we call it, 'nooch'). Tempeh is also a favourite of mine! I like to grate my tempeh to create a 'mince like' texture. With some taco seasoning, it would go so well in that Mexican bowl you made! I even used grated tempeh as the 'rice' in my vegan sushi, it works SO well and everyone wanted the recipe! This was so fun! Bravo!👏🏻 I always love a good challenge to make high protein recipes 😋 💪🏻 there really are so many vegan protein sources out there! I was dairy-free for like 10 years before I thought I was lactose intolerant, but turns out I'm just SUPER gluten intolerant, so I've been loooving being able to enjoy dairy again for the past few years! ESPECIALLY my Greek yogurt😂😉🤍

Amazing! That was what I was missing on your channel..🥹🫶great recipes🫛🤗 been vegan for about 5 years and it's amazing. I do it for ethical reasons, but I also believe a wholefood vegan diet is the healthiest diet in most cases🌱🩵 I don't eat sugar, oil, flour and salt too, but personally I don't feel like I'm cutting out something or that I'm missing out..I just love healthy plant foods😊

I'm from South Africa and my 1st encounter with Tempeh was in Bali! I did a cooking class and we friied it like fries! Yummy! Also i went vegetarian for 2 days in Bali cause the food was soooo good! Lovely vid as always !

That last dish looked like it should be on the cover of an Italian magazine. I have never tried Tempe, but I'll try it. Since I have been eating more plant-based, I feel better. I have made my own non-dairy yogurt at home using soymilk and probiotics, or a little already made yogurt as a starter. You can drain soy yogurt to thicken it for a greek yogurt. I wonder if the difference is the stabilizers in commercial yogurt. Adding something called Indian black salt, or kala namak to your tofu scramble with add that sulfur flavor that is reminiscent of eggs. All your meals look beautiful by the way :)

I asked ChatGPT to give me a 3 day vegan diet plan. I specifically asked for it to meet the protein goals for my age and weight. And to stay at my daily calorie goal. It gave me a really tasty plan. And the shopping list. Yesterday I had a roasted butternuts squash and black bean bowl that was delicious. I added Mexican inspired spices on my squash cubes before baking. Canned black beans seasoned with salsa. ( ChatGPT suggested sweet potato’s originally, but I don’t really care for them. The squash was on sale at my grocery store, it was the same color, so I figured close enough!

I went through an 8-year period of a spectrum of vegetarian, pescatarian, vegan diets, mostly due to lactose intolerance and probably unfortunately unhealthy restrictive habits. Largely quit while pregnant and diagnosed with gestational diabetes, and actually my lactose intolerance was lessening. There are SO many more yummy and convenient options these days… I still make vegan dishes quite a bit, as I do enjoy them!

My favorite tofu is from a Canada-based company called Big Mountain Foods. They have a soy-free tofu made from fava beans and a single block provides 64g protein for only 280 calories (0g carbs, 0g fat)! Definitely try to find that next time!

I was vegan for around 8 months and raw vegan for one month and it was REALLY hard. Trying to get in enough protein was difficult, finding recipes that were filling without having to eat all day was a challenge, and avoiding vegan foods that are super unhealthy (Oreos and chips and salsa, I'm looking at you) was almost impossible because I was hungry a lot of the time. This was years and years ago, there's so much info about veganism now and it's much more "mainstream" I think.

Yes, for sure! As this was new for me I wasn’t sure how easily I would find everything but it was very accessible, though bloody expensive!😂 And yes, don’t look into the eyes of the Oreos 😵‍💫🤣

I'm not vegan but I love to try vegan recipes as a way of eating more veggies and discovering new flavors! Also, less meat once in a while is good for the planet, good for my health, good for the animals: what's not to like? I've read combining quinoa and lentils was a good way to get all the kinds of proteins the body needs so the bowl is a really good idea!

Hi! I’m thrilled you enjoy my videos, thank you! I had to go back and rewatch because I thought, what 45g in lunch, that was dinner! You’re right, Paul, my wonderful husband and editor made a typo there while I was eating with Will. If you watch the wrap up at the end, I say lunch was 20g of protein which makes more sense with the Greek yogurt and the quinoa/lentil blend. Sorry, no magic here to pop that meal up to 45g!🪄😂❤ P.S 45 was for the dinner! That tempe packs a whallop, then the cheese, pasta, pumpkin seeds etc 😘

Thank you, I am no vegan either but I love new recipes, I watched "pick up limes" blog a lot for that reason - she gives lots of various vegan recipes like edamame and cashew cream soup of potato sweet peas curry with different sauces and spices and you can just amplify them with whatever non-vegan protein you like if you wish. I feel like home watching your videos. Thank you for posting!

Tempeh is amazing i love tempeh and seitan over tofu, but tofu it is always my go-to cause it is cheaper i love my vegan bolognese that i've shared on my own youtube channel

Tofu scramble is amazing!! I love Nutritional yeast. I add it to mashed cauliflower with a dash of milk and it's incredible. I naturally love vegan food tho I'm not vegan as I do love my eggs and Greek yoghurt 😊 tho I didn't know there was vegan greek yoghurt! @@MamaTenny ohh it's so good. Well at least I think so. I would love to try the vegan greek yoghurt. All we have in Australia so far is Soy or Coconut for vegan options. I love coconut but greek dairy is my all time fav. Also an excellent source of protein. Ohh and we have Oat Yoghurt too which is alright.

Thank you for doing this. I can't eat a vegan diet, but I love my veggies. Vegan foods are very normal- people eat and love marmite and vegemite, and peanut butter and jelly is vegan. That yogurt threw me, because it should be thick. Either Agar or konjac would thicken it, but it takes a couple hours. I think you were very successful in your day. The hard part of the vegan diet is protein. The digestibility just isn't there for me. But you did it, and you made delicious meals, too. Thank you for doing this.

actually protein is not hard, i get plenty of protein from the vegan diet, but know that you dont have to be vegan to enjoy some plant based forward dishes, i love sharing my own recipes on my youtube channel to inspire others to take a more plant base approach not necessairly so they have to be vegan

@@oxanadc Eating more vegetables is the goal! Getting protein from them is not. Plant protein is difficult for me to digest. I must source my protein from high quality animal sources, or I would soon show signs of malnutrition. But I love going to the farmer's market, buying the biggest carrots I can, spearing them on skewers, and roasting them on an open fire.

Ethical vegan for 8 years and I still can’t handle tempeh 😂 but you did an excellent job showing a healthy day of vegan eating. As a bikini athlete I eat plenty of nuts (women need healthy fats, so don’t worry), soy joghurt, protein powders and clean meat alternatives. At 68 kg (51y) I’m currently on 182g of protein. It’s really not hard once you’ve adjusted. 😊

Vegan here for 8 years.. I spend way less than when I ate animals.. I buy dried beans lentils peas HIGH FIiber AND PROTEIN whole grains and Make them for meal prep ADD VEGGIES AND 🍉 FRUITS THAT IS THE MIST EXPENSIVE PART.. SO I have fruit TREES AND A HUGH VEGETABLE GARDEN. ✌️💕

What you did was a plant based diet. Veganism is an ethical stance that includes a plant based diet. People get that mixed up. Veganism is not a diet.
