i make pancakes occasionally...i use (i think) the better homes and gardens "golden" cookbook from when i was a kid, only i use chickpea flour, soy milk instead of dairy, and omit the egg. i mix it up in a measuring cup, make a pan, and refrigerate the rest for the next day. with a decent glop of vegan butter, maple syrup, and a crack of pink salt, it's heavenly...but i too like to add something like fakin' chik'n or baked tofu or vgf bac'n on the side so the sugar from the maple syrup doesn't send me over the deep end!

Have you tried Soon Dark Chocolate tahini with sea salt? It is to live for!! So so good! I love to drizzle it on my oatmeal bake eith yogurt and fruit. Tastes like dessert

Maybe do a sheet pan pancakes you bake it take 15 minutes and makes a lot to freeze, I’ve been watching videos about this method

I have a microwave safe idli maker (idli are Indian fermented rice "pancakes" that you steam) I think I might use that and make some bite sized pancakes. BTW have you ever made idli they are gluten free?
