Very Busy Indian Restaurant Action: The Curry Masters Kitchen on a Saturday Night, Tiranga Leicester

✓ This is an absolute privilege and honour because in this video we once again get to go into the kitchen of one of our favourite Restaurant's in Leicester; if you recall our last video was of the Indo-Chinese Chef Krishna in action.
As you most probably know by now, we love recording and eating Indian Street Food but in this video we go "behind the scenes" to point our camera in the direction of the Curries section of the kitchen in which Chef Champak Bhai gives us a brief insight into how he cooks up his delicious dishes to a packed and busy restaurant.
As well as all the other ingredients, the chef is using no less than three bir (British Indian Restaurant) base gravies.
It is a real wonder how the chef is so calm and keeps his cool under such a fast paced environment.
Also in the background you can see the other colleagues working their magic such as the tandoori oven master making naan breads and the wok stir fry master cooking up his Indo-chinese dishes.
This is an example of real team work with everyone manning their relevant sections creating and serving up all the dishes with astonishing military precision.
Note that; in Indian restaurants dishes are cooked on a very high heat which delivers a slight smokiness to the cooked food and gives that distinctive restaurant flavour and character to a dish.
The guys here were very busy at most times of my visit and I didn't feel it appropriate or right to interrupt to ask what the recipe ingredients being used were or what exactly was being cooked.
Tiranga Restaurant & Bar is genuinely one of our favourite restaurants whenever my family and I visit Leicester because the food never fails to deliver on the taste factor and the portion size of the food served up is extraordinarily very generous.

This type of cooking is nothing like what Gordon Ramsay does. No communication necessary because it doesn't matter what time the food comes up. In Gordon's world all the food has to come to the window at the same exact time. Something you will never fully comprehend.

Great video, especially that you allowed the chefs and staff to take front place. Shows strength - quality when you make a video with no dialogue, allowing the action to tell its own story. Tiranga has an impressive hard working team in there. The featured chef, Chef Champak Bhai does operate calmly as you describe in your intro, also doing everything himself, like getting new cartons of cream out, whilst cooking multiple dishes. This is the best video of BIR cuisine I've seen to date on the internet. Unusually they keep the spices away from the cooker (ie not positioned at the back of the cooker). Plus it's interesting that he loads the spoon with spices by hand, when often the spoon is directly dipped into the spices. So much to see in this intelligently made, detailed video.

I usually try to avoid recording in very busy kitchens but the owners were keen for me to record at one of their busy times. It was a genuine privilege to be allowed a glimpse into this kitchen when it was so busy (this particular restaurant I've been wanting to record in for at least a couple of years now). Each and every colleague were working as a well oiled machine.........but at the back of my mind I kept worrying that I would perhaps get in the way, but it worked out well. Thank you again. I have work in Monty restaurant in Ealing london .. we have chef called javed who was 10 time faster n professional n was busiest n fully booked every weekend we always did at least three four round of table from 7to 11 pm I can't believe our restaurant is so low profile.. I know it after watching this channel coz we are not in this channel coz we deserve more than this..
