Brioches are my passion, just making them and watching them grow, they enchant me! A scented magic that invades the whole house, makes even a sad day happier! In this version with the orange-scented dough and the fresh cream and sour cherries filling (my favorite flavour) they are spectacular! They're VERY SOFT and they stay that way even for 2 days!
Since with these doses there are quite a few (14-16 pieces) you can also freeze them when cooked, as soon as they cool down, put them on a tray, well covered, and put them in the freezer. Then when frozen you can put them in freezer bags so you always have them ready when needed! 👍
Of course you can fill them to your taste, also excellent with black and white Nutella or Crema di postoccio etc etc…
⏱ First leaven for about 3 hours then, after shaping it, about an hour or until they double in volume!
🌡 We bake at 180° Static 175° Ventilated for about 25-30 minutes
📝 Ingredients
400 g Flour 0
10 g fresh brewer's yeast
90 g Sugar (you can increase if you prefer sweeter)
130ml water (slightly warm)
1 egg
1 yolk
60 ml Seed Oil (or Olive)
1 tablespoon Honey (preferably orange or acacia)
salt
1 grated orange
To complete:
leftover egg white
Custard
Cherry jam
