Just made this. Couple tips: I also added some toasted coriander, and cilantro stem/root for extra complexity of flavor. Use a tea bag or something for that, or boil the chicken a little while before adding them, so it's easier to skim without taking them out. Also, if you want a long, long simmer without ruining the meat on the chicken, take it out after an hour, remove the meat, and then put the carcass back in and then simmer as long as you like.

Hi Marion, you can try like a teaspoon of fennel seeds and coriander seeds and a few cloves. Thats the secret of Pho :) for a significant Vietnamese taste, I ll throw in one dried scallops that has been broiled a little bit. It wont disappoint you

Idk if you’ve ever tried pork pho but it’s essentially the same aromatic ingredients. The one major change you can do is crisp up some pork belly, cube/chop it, and throw it in after the fact for salty, crunchy goodness! You can also try it with pork rinds!

There’s no such thing as pork pho. The only noodle soup that has pork belly slices is banh canh gio heo (pork thigh udon).

I struggled with this. After an hour, I could not pick a single taste. I did add more salt, a bit more fish sauce and let it simmer low as i prepped the chicken. Separate it made no sense. But when plated and the lemon (i used lemon instead of lime) was squeezed in, it somehow had a flavor. Gentle flavor which i think is ok for the health. I havent ever had a real pho for comparison but this was an ok meal. Would I rave about it? Hmmm no. But I did enjoy it. Edit: A praise point though! My mom was food poisoned and this was the only thing she could keep down. So that is awesome because im in my 20's and seriously love my mom. So this wins in that section!

Thanks for the video and directions. Simple enough to do at home with the spices, onion, and ginger. Just like the #1 soup in the world, Tom Yum, the key is the broth. If you have never roasted your vegetables and spices before, please take the time to do it. The results are spectacular. And this is the #2 soup in the world. The stuff you throw in the soups are very adaptable to whats in the refrigerator. But concentrate on a flavorful stock and there will be an awesome payoff.

I use a combination of beef and chicken to make pho. The beef gives the broth a deep rich flavor while the chicken adds sweetness. Also, add black cardamom pods. It gives the broth a smokey woodsy flavor.

I'm not a chef, but if you go to an Asian supermarket... Buy yourself a whole chicken with heads and feets still attached, it's more flavorful and less greasy. One last suggestion, place the cooked chicken on a bowl of ice to prevent it from overcooking and falling apart. You're welcome.

Made this tonight using two chicken breasts. Instead of using all water for broth I used half chicken stock and half water. I also cooked the chicken for 40 minutes on low simmer. The chicken came out perfect!

I just made it with house chicken and it was amazing! Also unfortunately I didn’t have the ginger but I added garlic and still the broth turned out very delicious with that super cozy taste. I’d advise to put in less bean sprouts, I put too much and my soup tasted a bit too healthy 🤣 But I made lots of broth, so for my next bowl I’ll make it without the sprouts.

I actually made this for dinner tonight before I saw your video. I love pho and I actually prefer the chicken pho. I like to add thinly sliced mushrooms, carrots, celery or other fresh vegetables that I happen to have on hand.I also like to add cilantro to my chicken pho.

My mom would cook the chicken first, take it out, then put the bones back into the same pot and simmer for another hour or so, then strain for even more flavor....Chicken Pho is my favorite and originated in North Vietnam, each region has a different style or variations like beef, there is a ton of delicious Vietnamese dishes other than Pho, but Pho is the most popular and mainstream.

Try getting a rotisserie chicken from the supermarket if they are available in your area. The chicken is already cooked - so you can pull it off the bone. And you still have the chicken bones to make the broth.

That's what I love about this channel. Marion tells you everything you need to make an authentic basic form of whatever it is and leaves out extras that aren't essential. If you really do need something hard to find outside Asia-galangal comes to mind-she tells you so and explains why.

Instead of straining the broth, my mom taught me to put the spices in cheese cloth like a bouquet garni then drop it in the pot. After the chicken is done, you can just remove the cheesecloth bundle and you’ll have the broth without the spices.

Love all your recipes and I regularly make them along with your kits, just a question for this one, as the chicken is boiled with the skin on, is the skin then gooey to eat? If that makes sense? I imagine the texture wouldn't be too pleasant?

Yes, the skin will be gooey. A texture asians seem to enjoy, but many westerners find unappealing. You can remove it before cutting the chicken. Happy cooking!
