Ingredients:
250 g carrots
¼ cup plus 2 teaspoons sugar
½ teaspoon salt
1 cup lukewarm water
1 cup distilled vinegar (Dam Trang brand) - Normal white vinegar will also be ok

Thanks for the video. Nice and easy to follow. Do you have a recipe for the liver pate that goes into viet pork rolls or can we use any chicken or pork liver paté?

Do you have to use sugar? Can u use honey? What do you have to use so much sugar could you cut the sugar in like half

Will try but will use matchstick carrots from Walmart. I hate chopping!

Should be same and save you time prepping the carrots. I love fermented foods. Before fridge was invented this was how you store foods for long time. Just make sure nothing fuzzy is on top of jar. Also be sure the fermenting juice covers the food you're preserving to prevent bacteria and mold from eating food and growing. Either use something that press down the foods or dont overcrowd the jar or add more fermenting juice.

I used those. The organic ones were all they had that night. Just completed two jars but I went with two tables spoons of sugar and two of salt. We will see in a month! I did eggs as well. Tip. BUY pre hard boiled eggs. Easier than peeling.....wasted a lot. I will do that next time. Now to pickle some other veggies. I’m into it now but the house smells of vinegar and red pepper flakes!

Nice recipe. Do yourself a favor and sharpen you knife, please. It is very dull and dangerous that way.
