In a deleted scene from The First Avenger, Steve tells Peggy he can't jump out because the automatic pilot is jammed and set for NY, and only his strength can override it.

If Steve had jumped outta the plane, he would have landed in the ocean or hit himself with a glacier or iceberg, then he would for sure have perished. The plane even though it crashed, it still 'preserved' him so he could wake up later
