Afterwards, the fish was thrown out in its' entirety, and the complete work area was cleaned off and sanitized properly. We used our liquid detergent to scrub down the entire area of the cutting board including the cooler top as well as the knives and utensils, and then sprayed the entire area with a mixture of 2 tablespoons of bleach to a gallon of water and let that entire area air dry. The knives, after cleaned off with detergent were also soaked in this bleach liquid and then taken out to air dry.
If you're a sushi fan, this is why you need to visit only the places that have a good reputation; if not you'll be faced with some dangerous eating that could get you sick for many many months. Furthermore, we know that many restaurants, upon finding parasites like what we have shown, cut out the "infected areas" and use the rest. They may also cook the infected area as well. We choose to discard the entire fish as this is what a reputable establishment should do. Profit has no place when a patron's safety is in question.
The cameraman actually had an experience with eating fish infected with parasites. He ate raw wild salmon from a Publix in Lake City FL, a large chain supermarket and the fish was infected. A couple months later, he went to use the toilet and when he was finished, he went to wipe himself and saw a white stringy substance that looked almost like strand of mucus hanging from his anus into the toilet. When he went to wipe away, thinking it was mucus, it kept coming out from his anus and would wipe away. When he took a closer look, he saw that it was moving and was alive! Needless to say, he was in a state of panic and called his doctor who prescribed some pills to take. An hour after, the pills gave him a very bad case of diarrhea which when he looked in the toilet, were signs of the dead tapeworms. It was an experience he has vowed never to go through again...

About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. Fat Potato Mckinsey Greer You know, It's cool that you guys can appreciate the "maturity" (for a lack of better words XD) of the description. And it's more surprising that you take it as such an important warning. I live right on the water where I live, so catching and eating fresh, clean fish is super normal. Bad fish is pretty much unheard of. But it doesn't mean I shouldn't disregard the idea of being exposed to bad fish and parasites. It's a good lesson to be had! I'm sure grateful I've never had to experience having worms XD

I forget how shocking it can be to some people. But if you grew up fishing and hunting, you see how often parasitic infestations occur. It wasn't that long ago that our own populations suffered from this as well. Tapeworms were more common generations ago. I got them when I was a kid before. It had spread in my school class.

Worms from saltwater fish cannot pass to us that way and all must be frozen 1 day to be positive by law if used for sushi most places. but it is gross still! I'm a fisherman and it's not that uncommon to find sick over run fish of all kinds!

I love how Hiro is having fun with it while those tapeworms was telling the cameraman, did you miss me? Lol. It is disgusting but I think it helps give people an idea of what an infected fish would look like, if they were to make sushi or a meal, and what to do.

My mom told me about tapeworms when I was a kid and the image shocked me. One day tried making ceviche and saw white stringy bits in the fish.. Got worried and next day went to the hospital for a check up just in case. They claimed I had psychosis and forced me to be at the mental ward and medicated me for several days. This injustice traumatized me deeply.

It's amazing to me that you have so many people besides Japanese and Koreans who are terrified of parasites. Traditionally sushi is made with tuna not salmon. The reason for this is because parasites are far less common in tuna. Like the description says though, if you stick with reputable places odds are you are fine. Myself along with a large portion of Japan and Korea have consumed fucking unimaginable amounts of raw fish and I have never once had a parasite nor is this a major concern with Koreans and Japanese. Obviously there are dodgy places but even a fucking vegan place that's dodgy can make you sick. Quit the bullshit dude it's goofy as hell, go travel.

These thing's happen, even the absolute best restaurants can get a bad order of food coming in, even if it's only a single steak or a piece of fish, there's always a chance that an infected animal can make it through the system to the shelves, and I'm really glad you were so open about this incident and didn't try to hide it like many other restaurants would in order to keep their "reputation". You have my utmost respect!

Purplepoppyanimator Exactly it's not the "new supplier['s]" fault. Any wild caught fish (or farmed fish in open water) can have parasites. In the US it's a law for fish to be served raw or to be labeled sushi grade to go through the flash freezing process to ensure that all parasites have died so it doesn't cause an infection. Consuming dead parasites can, however, lead to allergic reactions like rashes and upset stomachs. When you run a restaurant it's your job to make sure you follow regulations and flash freeze your fish before serving it raw.

kapachangos Yes, salmon is known to likely have parasites like round worms. Tuna, on the other hand, won't have parasites. I don't have the best knowledge to give a list but those are the two that came in mind.

well if your willing to take the risk you can eat it but most countries food safety laws state that if meat is infected they aren't allowed to use it because it doesnt meet the food safety standards or so i have been told it again depends where your from the bar might be different in other places

@@dannwan8537 quite probably but deworming traetment is mostly done on freshwater fish. This is saltwater fish no the effectiveness of deworming drugs are unknown yet

This is a good seller, why, because they gave a full refund. There is no way to find out if a fish has a pocket of worms in it without cutting it open. In fact, if the seller is reputable they will give you a refund. If they are not, they will keep the money. This is why it is better to learn to cut fish from whole because you would never know if you ate this had it been a fillet with that section cut out. But then again not everyone has the luxury to get fresh fish whole, or the know-how to cut it.

A story to calm people's fears: Back in the early 90's, a fisherman friend of mine gave me a piece of Aku (tuna) belly. I sliced it up and started eating it as Sashimi. About the 3rd piece in, I felt something sticking to my inner lip, so I took it out with my finger. It looked like a piece of rice, but then that piece of rice got LONGER resting on my finger. I looked through the rest of my fish, and found three more. I called my friend and told him about it, and he said "Oh yeah, you're supposed to look for those while slicing the fish." He also told me that it was a good sign, as it means that fish was not infected with the Ciguatera bacteria which was prevalent at the time. (Eating Ciguatera contaminated fish WILL make you very sick) Long story short, I did NOT fall ill at all, even though I had a parasite in my mouth, and may have even ingested one. Does this mean restaurants should serve fish that had parasites in one part of the fish? NO. But having parasites in your fish is not always a bad thing, especially if you're going to cook it. I applaud Nove for being upfront and honest about this event. You guys ROCK!

Exactly. Worms in fish are very common. ESPECIALLY Amberjack. The worms that infest Amberjack are NOT tapeworms, but a different species that is quite harmless.

****PUBLIC NOTICE**** As gross as this is, it's fairly common with large species of fish such as amberjack, drum, grouper, tuna, etc. it's just something that happens in nature and the older a fish gets the more likely they are to contain them. I worked on a commercial fishing vessel for many years and it's very unfortunate but totally unavoidable, even if the fish is inspected/gutted before sale. An infected fish doesn't show any outward signs of an infection, therefore the seller wont know it contains worms until a chef filets the meat. As a supplier it's bound to happen and is by NO MEANS a poor reflection of the company. They end up having to replace the fish for the customer which means taking money they've already earned out of their pockets. Some of these fish can cost 100's even 1,000's of dollars, so you can just imagine the potential damage. A single infected fish from a days catch can literally make them lose any profit and just break even on the entire trip because of the high cost of obtaining these fish. FDA requires all raw fish for consumption be frozen. Proper freezing (-35°F for at least 15 hours) will kill the parasites (even the invisible microscopic larva and eggs). It is actually illegal to serve non-frozen raw fish in the US. Thus despite growing popularity of sushi in the US, there has been almost no cases of parasite outbreaks from sushi. Now, you can still get sick from sushi mainly through cross contamination (basically food poisoning) and improper handling. Being a raw product, sushi can still pick up salmonella (a bacteria and NOT a parasite) if left out too long.

The newest studies show that plants feel "pain" too. Though, they do not have a CNS like most animals, they are more like cephalopods in that the nervous system is spread throughout the organism. Plants produce chemical and hormonal responses to stimuli, especially to tissue damage. This is what we know as pain. Life feeds on life. But in most cases, by the time they get to the plate, they don't feel the pain of someone eating them. Also, most carnivorous animals eat other animals while they are still alive; atleast we give them the courtesy of killing them prior to the cooking/consumption process.

+JayGatzVFXsk8r Not really. Farmed fish tend to be full of disease, they're of less quality, and in fact they tend to infect wild populations. As a general rule, wild fish are far healthier than farmed ones.

I was hesitant to watch this but felt it was very important as my sushi bar recently closed and I'm now learning to prepare my own sashimi. I'm fortunate my friends of 23 years owned the sushi bar and I've been eating there that long and am still in contact with them as they have become family after so many years, but I felt this was very important to watch to be sure of what I'm preparing at home as it's only almost 2 months I've been preparing sashimi. And I knew sake was one of the riskiest fish for parasites and tapeworms. THANK YOU for this informative video!!!!!!

I worked as a butcher for a large restaurant. I would of sent that back right away. Not because of the tapeworms. Wouldn’t even find them. I’d send it back because that cavity was improperly cleaned and it looks old. With fish you have to have high standards. Halibut gets chalky if it’s to mature or old. And the cavity starts to rot if you leave that crap in there like that.

Hi, ive studied parasitology and is a certified lab scientist and i say that this worms can harm human most especially if eaten raw.. they are called diphylobothrium latum most commonly called fish tape worm which is the longest of human tapeworm.. if these worm are ingested they morph into a stage that they become infective as well as pathologic to human, the worms u saw on d video is one stage infective as well as pathologic to fish.. these worm has a structure called scolex which they hook on to its host's intestine thus allowing them to extracts nutrients for survival.. people with diphylobothriasis or fish tape worm infection progress to anemia more specifically megaloblastic anemia commonly known as vitB12 deficiency anemia due to worm juicing the host.. in some rare cases human with fish worm infection will not manifest systom and become asympomatic while other take years before pathology to progress.. yeah cooking the fish well and thoroughly might help but better be safe than sorry.. u dont want those nasty bastards jingling boogilin in ur butt hole..

Thanks for showing this. I remember going fishing with my granddad forty years ago and we caught a Mackerel. My granddad reeled it in, took one look at it and tossed it back. It had lesions , like red, 'hairy' blotches, all over its skin. My granddad said it was sick and it wasn't fit to eat. Seeing worms inside a fish is no big surprise, but still disgusting. The surprise was that the fish looked so healthy.

Cloudy eyes told me all I needed to know. That's a sign the fish isn't as fresh already. I wouldn't have taken it in on that alone. Sounded quite slimy too, but can't confirm that on sound alone.

I'm sorry for your financial loss because I'm sure that the fresh fish you buy isn't cheap. I'm glad that you went ahead and demonstrated the way to process the Amberjack. It made me smile that you discarded the fish and disinfected the entire area. Several years ago a friend of mine worked at a local restaurant that would have used that fish, regardless of parasites. He witnessed some very disturbing activities and reported what he saw to the proper authorities. The health department made a surprise inspection shortly after his report and found the carcass of a fox in the walk in freezer! They were immediately shut down, and the chain of restaurants they represented immediately withdrew their support, which caused them to have to close for good.

Amberjack are notorious for having a fair amount of worms and this is common knowledge for reef or wreck fishermen in Florida. The tail portion of the fish normally has the highest concentrations of the parasites. Amberjack aren’t the only ones though as I have personally caught snapper, grouper, sea trout, and black drum which have been riddled with worms.

I have never seen a Pollock that didn't have liver worms. I worked on Toyo machines in Alaska. We would flash freeze the meet to kill the parasites that are in the fish so it "could be" safe to eat. Almost all pollock had tapeworms in their intestines too. These worms in the flesh are extremely common in Alaskan Halibut. So common that when processing Alaskan Halibut that the meat is sent over a light table where workers use tweezers to remove the worms. Hope you all enjoy them fillet fish at fast food and imitation crab meat. XOXOXO

I have literally pulled out something white like this in my salmon sashimi and thought it was a white vein! Oh my goodness! Is there even any such thing as white veins in fish! Glad I stopped going to that sushi place a while ago. Wow

im glad you are sharing this information. I already knew of this fish obtain more parasites than land animals. many believe its one of the caused of cancer consuming seafood.

Reminds me of a conversation between my father and my maternal grandfather. Don't remember what it was, but Dad said it was a good way to catch worms, whereupon Opa said worms were nothing to worry about, when he got them they gave him a spoonful of turpentine and sugar and the worms were gone quick. Dad says, you got sugar? I wish I got sugar. Papa gave us turpentine straight.

Well, I prefer to me on the safe side with these kind of stuff (I have health anxiety) but I know that many people like sushi and it’s delicious! I just eat the vegetarian one or the one that has cooked fish or meat😊👍🏼

ExtraCrispyToast If you remove the parasite, the fish is fine to eat. People are just squimish about that shit, but most fish DO have parasites. It's not hard to remove them.
