I think next time I make this, I will put all the dry ingredients in first and slowly add the water to get the clear gel stirred in better. I ended up using my stick blender to get rid of the clumps. It looks like my jars all turned out well though. I can't wait to try it out in pies this fall/winter. It is so satisfying to do home canning. While I’m enjoying watching this video, I have seen other videos that use more efficient methods of getting everything in there. Also, most people blanch their apple slices first to release oxygen before mixing the slices with the clear gel/spice/liquid mixture. You might want to watch a few more videos before deciding on a particular technique!

Basically what I do, but I would do 2 cups of clear jelly. And I would use a bigger pot and mix the apples in the jelly. Then jar it up. Much easier.

Small suggestion, pour a little of sugar mix into jar 1st to make sure the very bottom of apples will be in the sugar solution. It's similar to tomato sauce at the bottom of Italian casseroles (baked ziti, lasagna, ... to prevent pasta from sticking to dish

I personally ( my opinion) don’t like suregel , I used on blueberry jam & something else it didn’t set ! Then I came across the clear jel cook type , that is a blessing! Also Ball low-sugar or no sugar is lots better than suregel . I have tried certo-paks of liquid pectin & that works ! I was giving advice to my sister when she was making her batch of fruits , she was adamant about what recipe called for suregel, I said don’t do it , ok try suregel, but buy certopaks & some Ball low sugar , she called & said you were right ! Like I mentioned this is my experience with it , I’ve seen lots of people use it & worked for them , it’s not for me !

I just made a batch using a recipe from an Amish cookbook. You keep saying your syrup is super thick. I only wish mine was that thin! Mine was like the slime kids play with. I'm going to have to decrease the Clear Jell by half I think. Otherwise, it tasted pretty good.

I think it is important to pack it all down before adding the syrup.. I put everything together and the syrup ended up on the bottom and the apples floated to the top. Won’t make that mistake again.

No it does not have to be sealed. They do sometimes seal before, and thats ok too, while in the water bath it will still release any air and reseal when it comes out.

No, you need to use the regular, not the instant. Instant is used for things like gravies and sauces to thicken them.

I've seen a lot of reviews regarding consistent siphoning. What everyone seems to have agreed on, is that you need to have a 1 1/2" headspace, and that puffs up to the 1" mark, this preventing syphoning.
