Hey Jenn and Zack! I have physical disabilities so I am a lot slower getting my canning and preserving done. The cucumbers and squash came in the same time the green beans and peas did and I now have them in the outside fridge and I don’t know if I should still use them. It makes me sick to throw them in the compost pile but it is what it is. What would you do?

Ya’ll need to invest in building an outside “canning kitchen”! Having one is on my wish list. Also, put the salted cucs in a colander, then set the colander in the stainless mixing bowl. This keeps the bottom cucumbers from sitting in the salted water that drains off. Works for salting eggplant too!

I am 70 my husband is disabled. We couldn’t afford to have our garden tilled this year. Saying that we also have a very tight budget. But I’m going to buy some cucumbers to do your recipe! We love pickles… your recipe is so simple. Which I love! Thank you Thank you again for the video!!!

Anyone who doesn’t have the money for a canner and supplies should meet with some of the elderly in your community. A lot of them have the supplies and the wisdom but not the strength to do the heavy lifting and stamina to preserve anymore. They may be willing to work with you and trade your labor for their supplies. That way at the end of the day, you both have canned goods and also good quality time spent learning and building community. I did that years ago. An elderly lady in our church gave me her water bath canner and her chow chow recipe for keeping her supplied in chow chow. I did that for years til she passed away. We ended up with a great relationship and I would go visit her and share her stories and wisdom. Trust me that if you find that, it is a definite win win for you both. Many young and old alike are lonely and have wonderful things to share with one another.

I gotta be honest here lol. I've made many a pickles in my 70 years...B & B , dill, etc. I found that I actually like the Mrs. Wages pickle mixes better than my own. I use her Bread & Butter pickles and her Kosher Dill Pickles mixes. So much easier and everyone I share with complements me on how good and crunchy my pickles are. Some may view that the lazy way but I'm all about taste and we love her mixes. Not the refrigerator type of mixes but the quick pickle blends. I've also used her regular dill pickle mix and although it's good, I prefer her Kosher Dill blend. I do, BTW, use some "Ball or Mrs Wages pickle crisp" added to my jars. Always crunchy and delicious!

You both have the loveliest smiles. Wish my hubs would garden and can with me. So many women now are doing all the prepping. We see things going down hill fast almost intuitively and cant move fast enough. I grew everything we need this year to insure many canned meals and bases for chili, tex-mex soups, home made Rotel, pizza sauce, bruschetta, pickles, salsa, enchilada sauce, pie fillings, syrups, jams and so much more. Got me a Kitchenaid veggie chopper to be my right hand in all the chopping. Its going to be a long canning season. Im putting up every scrap and every way I can. I hope people are heeding the warnings. Bad things are coming.

Even if you can't grow it, preserve it. Restaurant supply stores is a great source. #10 can of tomato sauce, crushed tomatoes, diced tomatoes, whole tomatoes, spaghetti sauce, marinara sauce, pizza sauce and more. Recan into glass jars to help these acidic foods last longer.

Love the positive attitude of your family and how your channel has grown. You also have a great model for others to take ideas from to support one's own homestead (I call small farm). I am elderly and disabled, but I grow some, but I have been going to the local farmers market to get more to put up. And, yes - it is time to put up as much as you can.

Not all of us have that privilege or have the access to farm fresh or can afford all the equipment needed. Glad you all can do it. I get enjoyment out of sharing what I do have the space to grow. God always provides what I need. He knows my heart.

I just had this drop on my feed today! Just a hint for you, You can use a regular pot with a towel on the bottom to water hatch your goods. Also, you can buy some rules then can a couple. Small amts. Now and then! Fermenting foods is an awesome way to preserve things and they taste great. Please scroll through YT for videos of canning stuff the old way. Buy what you can, can what you buy.

I've got my cucumbers and I'm canning bread and butter pickles tonight - so much better than the store bought kind with the amount of money they're charging for a jar. Tomorrow, it's some sweet relish. A lot of people don't realize that sweet relish actually makes for a decent side dish - at least that's what I recommend. Got plenty left over from the last harvest stored in the pantry. Sunday is usually snap bean day. Nothing like sitting on the front porch, snapping those freshly picked green beans and throwin' 'em into the pot.

Bread and butter pickles are my favorite pickles. Next comes Dill pickles. I can remember my grandma canning and how she had shelves full of items that she had canned.

I use my great grandma's recipe and it's a cooked pickle, you salt the cucumbers and onions sliced thinly, 2 parts cucumber to 1 part onion. Let salt for 4 hours, drain, rinse thoroughly and out in a large pot. Add celery seed, mustard seed, turmeric, vinegar, sugar, pepper corns, garlic, and a few other things to taste. Bring to a boil until you cook the shine off them... they will be softer, but so will the skins. Then pack into pint jars with 1/2 inch head space, making sure there is enough liquid to cover the pickles in the jars, add seals and rings, process 15 minutes in boiling water bath. I made that recipe so many times, and the pickled beets recipe, it was the first complex thing I canned on my own when I was about 12. And now I use canning as a homeschool lesson for my son, math, science, history, and home ec.

Y'all are so awesome! You have totally inspired me to increase my homestead skills since I subscribed to your channel. I will be paying off a freeze dryer in 2 days because of that inspiration! May I suggest a book with all of the tips, tricks and recipes you have learned with yours? I need to learn all the things y'all have learned, including the milk. I would for sure buy it. Our corn crop was awesome, tomatoes, not so much. Hoping for a better fall garden since we could possibly have an extended growing season. Love that dress, Miss Jenn. You look amazing with your facial and all :)

This year has been a very big learning curve for me. The realization of just how many plants are needed to preserve shocked me. I am grateful to have had that experience this year. We are at the stage of buying from markets in season and canning, I've been watching and learning for a couple of years now. Last summer was my first water-bath canning and it's thanks to people like yourselves who are willing to share your knowledge. Thank you. Next spring we plan to plant our first garden. Why is it so hard to find organic these days, everyone seems to love spraying those damn chemicals?

I did my first pressure canning this year on 45 years when I spent summers with my grandmother....ball canning book is def worth the investment...tried and true and easy instructions...I'm making salsa today after a market haul of a box of romas yesterday...and maybe some tomato sauce...and def more peach jam and probably some kraut...my tomato and cabbage were a huge fail this year...this crazy weather and contaminated raised bed soil and even my purchased black cow compost...working around all these issues the best I can to make sure we have food for the winter

Ball pickle crisp granules are simply pure food grade calcium chloride, versus salt being sodium chloride. So it’s likely better for you than regular salt. And you can skip the step of salting your cukes to remove moisture. Suppose to work well on other canned veggies like peppers

This is my third year gardening. I’ve tried and tried with corn. Today I pulled my first cob and bit into what has to be a cob of Heaven on this side. I’ve never tasted actual fresh corn on the cob, right off the stalk. I will ALWAYS drop seed for corn from now on! I probably pulled it too soon because the kernels were kind of small but it was mind blowing to me! My cucumbers just started popping. I went to Walmart, just today, looking for pickle crisp. I’m so glad, now that I’ve seen your video, that they didn’t have it. I made 2 jars of quick pickles last year, ate cucumbers in salads, gave away most and composted a few to the worms. This year I plan to learn how to preserve with canning! Your video showed up just in time for me! Now I’ve got to figure out what to do with all the squash. 😂 Never had any luck with squash (squash bugs and such) but this has been my year! Canning it is a must! Right now my countertop and fridge is packed with squash begging me to do something other than eat it fresh! Not to mention my family has threatened to disown me should I cook it with dinner one more day! 🤣😱 I’ll be looking for your video on squash preserving as well. I found out something that should concern homesteaders. Greenhouses can go up in flames due to spontaneous combustion. Shade cloth is flammable and also the acrylic coating on the glass.

It is really hard to grow things here (Arizona) BUT we do have something called Produce on Wheels and it's rescued produce, every saturday. $15 for 70 pounds and it's always a surprise. I've got a pressure canner and a water bath canner in my Amazon cart... next up jars. I can do this because I've been watching you two like a hawk. It's happening. Thank you. xo

I am 70 yrs old and live alone but have 3 daughters that live nearby and 6 grand as well. I am the only gardener and have a decent garden for living in the suburbs. I am saving up my harvest by freezing so I can get enough to do some substantial canning. Tons of tomatoes some peppers and some cucumbers. The zucchini are just getting going. I have mostly canned jams but an going to do tomatoes next. It is going to be my reserve for the family if things go south!

When you get so many cucumbers that you can’t make anymore pickles, cucumber lemonade is a great option. I juice a bunch of my extra cucumbers and freeze the juice in 2cup containers. Recipe: 2 cups cucumber juice, 2 cups water with 3/4cups sugar dissolved in the water to make a simple syrup, and 3/4cup lemon juice. Mix all together and enjoy. It’s summer in a cup!

Try adding a grape leaf to each jar, it gives off something that helps keep the pickles crunchy, it is simple and easy!

@@worleyhavenhomestead1448 I have some grapevines also. We never get grapes as the wildlife gets them before us. This year we covered them with bird netting but Japanese beetles got them. Grrrr I didn’t know if it was fresh or dried grape leaves that pickles needed. Thank you for responding! I will definitely try it. Any tips are much appreciated with homesteading, even at my age. Always learning.

Jenn and Zack, I made the absolute best Bread and Butter pickles, the absolute crispest pickle's I've ever seen and they were delicious. We used actual pickling lime, mixed in water, poured over the cucumbers to cover all the slices. Leave set covered overnight (not in the refrigerator), repeat for two additional days. The lime must be thoroughly rinsed at the end of each day. At the end of the third day, drain and thoroughly rinse for the last time. Then you will use your regular recipe. If you wish, you can pre-cook your vinegar and spices so you don't have to have the whole spices in with your pickles. My family doesn't like to have the, like the mustard seeds on their pickles. I guess it's all a matter of preference. Since I am 77 years old now with severe spinal issues, I cannot make pickles or can anything any more.

Awesome job guys! We started a new process for our tomatoes. Last year we mostly diced up and ran through the freeze dryer. This year we blanched and peeled THEN ran them through a juicer! Out one side we got juice, the other side was a perfect tomato sauce! Just the right consistency, I was surprised. We put both through the freeze dryer, last batch in there now. We also put up 6 quarts of green beans in the freezer, we go through them so fast, no point in canning around here. Maybe have more plants next year so we can do some pressure canning with them. Have 13 HUGE bell peppers sitting there looking at me. Gotta get to dicing. whew what a weekend! Great though.

If you happen to need a quicker method for crunchy pickles, you can also use grape leaves which are full of Tanin! That's what the elderly people used to put in their jars for crunchy pickles! That's what I use when I put up my pickles and another great thing about that is, is that they're FREE AND ALL NATURAL!!!!🥰

Learning to can food is great, no matter what pre-empted the move to do it, put it on KZbin, etc. I've felt the nudge to start learning how to do basic survival skills as well. Learning how to build shelters, learning how to use what is around me for protection, and learning how to have a food source readily available. There are two ways of thinking on this. First, we are severely overweight, and food hoarding is probably not the most relevant thing to learn how to do. If there is a failure in structure, it would likely only be 6 months to 2 years, and it might serve our bodies good to go without for a bit, not because we have to, but because God wanted to do a little sculpting since we haven't seen capable of doing it ourselves. Second, I think it's awesome how supportive you are of your wife, and what she is doing, and supporting her role as homemaker, but don't forget your own role. This is a divide and conquer kind of world when it comes to family chores, family responsibilities, as well as societal responsibilities. My preference for you, is to ditch society for a while, and get back into the woods, following the Old Testament a bit and plant your fruit bearing trees, cultivate a place that can handle a little hunting and fishing, and do a little shelter building exercise until you're good at it. Learning to make your clothes, your shoes, and anything else you plan on using from the society that paid a lot to show you what was possible. It has to be a family decision and it has to be thought out properly. Spending some time doing that would be absolutely detrimental to any family that plans on a future for their offspring.

It has been 105 and that is hot here in Texas. Every garden in my town has failed. To hot for my tomato plants to go. It’s been the worst year for growing food.

I agree that everyone should be storing as much food as possible. I have been talking to my family for a long time about doing this. I do not have a garden but I do have green beans , tomatoes, carrots, cantaloupe, squash and I have a peach tree that always provides bushels of peaches every year. I go to the farmers market close to where I live to get to get the vegetables that I will be canning or dehydrating. I have bought extra jars even though I really have plenty for my house but my kids are really wants can more and even though they will buy their own jars I want to make sure we have enough. Our beans are just starting to come in and I canned 6 pint and half jars today and will continue as they come in. Pickles are on my list as soon as they come to the market but it will be a few weeks yet. I am ready!

Jen you need a mandolin they sell on Amazon for chopping it only takes a fourth of the time to slice. I'm older and have arthritis and it has helped me so much.

my neighbors turned me on to using the giant cucumbers is to make a brine using red hots.. peel the cucumber and remove the seeds the cut the remainder into strips they are pretty tasty around thanksgiving...

I take the larger cucumbers and dehydrate them for use later on ….great in dips, salad dressings and powdered for green smoothies. There’s a recipe for Polish pickle soup, haven’t tried it but a restaurant in Mich is noted for it. We just bought hot relish made with ground cukes from a Amish market and it’s very good…$4.49 for a pint…..their home canned quart jars of veggies etc were $7 a quart. I love one of the farm markets we go to, very large organic broccoli was only $2 , large cabbage heads $2 but tomatoes were $1 a piece….wow. I craved a tomato sandwich so I bought a box of 5 smaller tomatoes for $4…sweet baby melons $4, large cantelope $4, 10 lbs of Idaho potatoes $5. Didn’t buy onions at $1.50 each 🙀 Making four loaves of Jenn’s zucc bread today because my daughter gives me her large ones….at the farm market they were $1 each for small ones. I also have dehydrated them. Lol Jammerill on You Tube freeze dried cherry tomatoes and never halved them and they blew up in her freeze drier….😵💫

I used to sell my bread and butter pickles for $4 a pint and $8 a quart twenty years ago...js...I had folks pre pay to insure they got theirs every year...

Yes! And most all bread and butter and sweet pickles are sweetened with high fructose corn syrup. This is why I make my own.

As a suggestion if you use a mandolin you can burn thru cutting those cucumbers in minutes. You can even make them crinkle cut if you like that shape. Thanks for the video, love your canning videos!!

They're my favorite too ! I was munchin on some while making dinner one night and to my surprise I realized I had eaten just about a whole jar without knowing i had done so ! Lol they're so good ! Needless to say i didn't eat much of my dinner. I had filled up on pickles .🥒🥒

Jenn my cucumbers grew like crazy and I’m so sick of making pickles & relish but I’m done for the year praise God🙌🏻😜 I just started sending more cucumbers to fire dept with husband they love getting extras from the garden! I usually soak mine using pickling lime but I did try some this year soaked in salt brine-we shall see if I like it that way-I’ve yet to try any using pickle crisp-maybe I’ll try it one day🤪 I’m like y’all -too much garlic in anything just isn’t possible!

Over 20 jars of dills pickles today & about 15 jars of okra....more okra tomorrow and peppers. I too am tired but as long as God gives, I am gonna do my part here in South Mississippi
