Here, a restaurant waiter makes about 26-30$/hr. And barmaids with cleavage can get 800$ a night pushing booze in bars and pubs. BIG tipping place. The way we see it is IF you can afford to eat out instead of cooking yourself. You can afford the tip... But we usually do not tip for counter service. Or it's like 50 cents instead of 15%. I'm not cheap, but I'm not stupid either, so when I go out, I get a running tab with my credit card and I pay ONE tip at the end. They expect 2-3$ in tip for each drink at 5-6$ when you buy them one by one. It's RIDICULOUS!

The whole Sarah segment seems like a comedy sketch. From the woman talking about how she hopes he doesnt take ravioli, through Sarah immediately offering him the ravioli, the little "you know, I hate Sarah", right up to Sarah's evil smile after she gets confronted. Everything, the timing, delivery is just comedy perfection for me.

It’s the temperature of the water off the coast and the diet the lobsters get that tempers the lobster and changes it’s taste and texture. Same water, different diet and almost perfect temperature for natural growth. Even just a few degrees difference can change the texture of a large aged lobster. Treat them beautifully in life and they will treat you beautifully in death. Respect your food while it’s alive because it’s ethical and it makes it taste better.

He was right though. While yes, there is a difference in taste and consistency, that is purely an environmental factor. Canadian lobster and Maine lobster are the exact same animal on the specific level. He was still in the wrong for false advertising, but he was not wrong on that point about them being the same animal. And he knows this very well, he even namedrops the binomial name for that species of lobster. He's clearly done his research, because he wants to be able to use that argument to justify overcharging for his product.

I've used it for warming up sauces with thick ingredients rather than waiting for them to melt, but I don't know if I've found anything else that doesn't suffer in quality from Chef Mike's efforts

The owner knew it was an issue and blamed her for suggesting it rather than taking responsibility for having a bad item on the menu. I still think Rita and Lisa ended up being pretty cool people, but they were in the wrong there.

I’d like to say as someone who has dealt in lobster at restaurants in the northeast for YEARS there is a HUGE difference between Maine and Canadian lobsters. Any chef or cook worth his salt knows that. Lobsters from Canada have tougher meat and much, much harder shells and don’t have nearly the same sweetness. You can literally look at them and see the difference. You would never mistake the two, it’s not a subtle difference visually or by feel. With a few well placed knife cuts I can easily crack a Maine lobster of all its meat in literally seconds. A Canadian lobster is harder to do that the same way and you’d be surprised how damn sharp their shell is when it cracks.

@@togavibes I’m not too sure if their is a major difference in diet, but they are both cold water lobsters. The difference off the Maine coast and Canadian coast is Maines waters are slightly warmer and it just provides the perfect texture for the meat and and the shell is considerably softer. You can really tell the difference easily. Canadian lobsters are bigger and they look like they would kick a Maine lobsters butt in a fight. But yeah I think it’s just that slight difference in water temperature that makes all the difference

@@togavibes it's a water temperature difference, kind of. A "lower quality" lobster has a thicker shell, but it's really not as massive as a difference as people let on. The owner is still full of shit calling a lobster caught in Canada "Maine lobster" but Gordon's being a bit pretentious aswell. You can definitely catch a thinner shelled lobster in Canada and vice versa

@@dallasparty316 This is a reply from Daniel N elsewhere in the comments, you can probably find it since it's been favorited by Kitchen Knightmares: "I’d like to say as someone who has dealt in lobster at restaurants in the northeast for YEARS there is a HUGE difference between Maine and Canadian lobsters. Any chef or cook worth his salt knows that. Lobsters from Canada have tougher meat and much, much harder shells and don’t have nearly the same sweetness. You can literally look at them and see the difference. You would never mistake the two, it’s not a subtle difference visually or by feel. With a few well placed knife cuts I can easily crack a Maine lobster of all its meat in literally seconds. A Canadian lobster is harder to do that the same way and you’d be surprised how damn sharp their shell is when it cracks."
