On this particular day (every day is different) I had around 2100 calories, 115g protein, 231g carbs, 77g fat, and 55g fibre. I met all my micronutrient requirements as well. I didn't exercise this day. I don't track this daily, only for nutritional purposes and these videos.

RECIPES
Granola
Ingredients:
1 cup rolled oats
1 cup coconut flakes
1/4 cup maple syrup
2 tbsp melted coconut oil
1/4 cup pumpkin seeds
1/4 cup puffed quinoa
Preheat the oven to 180°c. Add the oats, coconut flakes, maple syrup and oil to a bowl and combine. Spread it onto a lined baking tray and bake for 12-15 minutes until golden. Remove from oven and toss through the seeds and quinoa. Cool and store in an airtight jar.
Tofu Larb Inspired Bowl:
Ingredients:
1 shallot
2 garlic cloves
1 red chilli
handful fresh mint
1 tbsp tamari sauce
1 tbsp light soy sauce
1/2 tbsp rice wine vinegar
1 1/2 limes juiced
1 tbsp brown sugar
450g firm tofu or vegan mince
Sesame oil to cook
Basmati rice to serve
Fried onions to serve
Lettuce to serve
