On this particular day (every day is different) I had around 2100 calories, 115g protein, 231g carbs, 77g fat, and 55g fibre. I met all my micronutrient requirements as well. I didn't exercise this day. I don't track this daily, only for nutritional purposes and these videos.
Supplements I take - not shown in the video:
(individual to my own needs)
- Vitamin B12
- Vitamin D
- Iron
- Zinc
- Magnesium
- I use iodised salt
RECIPES
Granola
Ingredients:
1 cup rolled oats
1 cup coconut flakes
1/4 cup maple syrup
2 tbsp melted coconut oil
1/4 cup pumpkin seeds
1/4 cup puffed quinoa
Preheat the oven to 180°c. Add the oats, coconut flakes, maple syrup and oil to a bowl and combine. Spread it onto a lined baking tray and bake for 12-15 minutes until golden. Remove from oven and toss through the seeds and quinoa. Cool and store in an airtight jar.
Tofu Larb Inspired Bowl:
Ingredients:
1 shallot
2 garlic cloves
1 red chilli
handful fresh mint
1 tbsp tamari sauce
1 tbsp light soy sauce
1/2 tbsp rice wine vinegar
1 1/2 limes juiced
1 tbsp brown sugar
450g firm tofu or vegan mince
Sesame oil to cook
Basmati rice to serve
Fried onions to serve
Lettuce to serve

Hi everyone! I hope you are doing good😊 Here's a what I eat video with some high protein meal ideas and a crunchy granola recipe (see description)! Let me know if you want more high protein recipes? On this particular day (every day is different) I had around 2100 calories, 115g protein, 231g carbs, 77g fat, and 55g fibre + hit all my other micronutrients. I don't track this often, only for these videos or on occasion to ensure I'm on top of my meals. Thanks for watching ❤️

Please do ignore comments that say your what I eat in a day vids is monotonous or boring, I love the simple vid presentation even if in the future vids you don't use song just the sound from the meal prep is okay for me, I am looking for simple, healthy, affordable, easy to make meals, and how a plant based eater stay consistent in diet that works for best👍☺️

lemme give you a brazillian tip to how to make the best rice, that doesnt stick! sautee onion or garlic in oil, or both, your choice (around 1 big onion/3-5 cloves of garlic). then add you rice to the onions/garlic and toast the rice for 2/3 min, this process will make the rice form a starch pellicle in the grains (it will prevent them to stick). use the 1:2 ratio for rice and water (2 cups of water for 1 cup of rice). and thats it!!! ofc salt too

Look so yummy as usually. I've noticed that you're now cooking with oil, I think about doing the same after being oil free for almost 6 years, because food taste so much better with a bit of oil to just fry the onions, it makes all the difference lol and I don't think cooking with a bit of olive oil is a big deal after all. Otherwise, your meals look always sooooo yummy I think I'm gonna make the scrambled tofu with rice for lunch, I have all the ingredients haha. Much love from Paris

Thank you ❤️ Haha yes over the last few years I have started cooking more at home with oil for certain dishes, I was never 100% oil free but mainly was at home. I still think it’s no health food but it does of course improve the flavour or texture of some foods😊
