hi Wendy -Great video 🤩I cycle a lot and do long rides of 100km or more a few times a week. cooked Potatoes with a bit of salt are my lunch food of choice and as I ride I will pop a whole pitted date for energy. People sometimes make fun of my potatoes but I never get stomach aches like they do from eating all those processed gels and bars. I like the look of that quinoa salad you made! Yum! I enjoy the taste of plain foods now, It does take a while for one's taste buds to adjust. I can get those breads here in Canada and they are really tasty and nice for a change. I like toasting the slices for a crunchy and chewy texture. Looks like you had a great time on your road trip. I'm definitely subscribing to your channel 🥰

Wow! This was a really well done video. You have a knack for explaining things. I’ve just started eating pb 3 weeks ago. And the “yt algorithm” worked because this video popped up on my feed. This helped me see the possibilities with travel and eating on the go!! I really need a new quinoa recipe too. Thank you!

Thank you for sharing!! I'm good about prepping for my camping trips, but I struggle with what to eat at European restaurants. I just spent two weeks in Italy, and I found eating out at lunch and making salads for dinner was best to maintain some semblance of healthy food choices. Also, what the potato in my purse thing about?

Yeah eating out can be difficult. Especially if you are oil-free, I bet that was a challenge in Italy! And about the potatoes, it literally just means carrying cooked potatoes with you. 😆 It's great anytime you go somewhere that you don't know if you'll be able to find plant-based options like going out to eat with friends or going on a plane, etc. In my case I didn't literally carry it in my pocket, I just brought a container of cooked potatoes with me to the hotel and on the road.

Thanks! I tried to find a place as close to the center of the path of totality to get the longest amount of totality. Where I was it ended up being just under 4 minutes of totality. Which I believe is actually quite a long time, during the 2017 eclipse, totality only lasted about 2 minutes. And then the partial phases of the eclipse go on for a couple hours before and after totality.

Thank you! I am relieved to know others cannot keep foods like peanut butter around … Gave me hope I will one day be able to resist eating nut butters by the spoonful!

Yes! Nut butters used to be my downfall! But this video was recorded about a month ago and I'm happy to report, the peanut butter is still in my house! I think strictly avoiding it for so long helped me. And with this jar, I've only been eating it in something else...like a sauce or dressing or in oatmeal. If I let myself eat a spoonful that could be a slippery slope! Best of luck to you!

@@showmemovegan Good point about making sure I eat nut butters as part of a sauce, dressing, etc vs something where that is the primary flavor (i.e. on a rice cake)… I bought unsweetened peanut butter powder and rarely touch it, except to make a Thai peanut sauce or to have it as part of banana nice cream . . . I do hope someday I can “rarely touch” the real thing.

I'm still learning the Instant Pot. After the 15 minutes on the potatoes, for instance, do you let the pressure release naturally? I'm noticing people don't always say in recipes whether or not they're letting the pressure release naturally or manually release it. Is the assumption to let it release naturally? Thank you for any help!

Hi! Sorry I didn't explain that. I personally let it natural release in most cases, so sometimes I forget to mention that. I suppose there could be some things where the natural release might overcook something, but for most of what I cook in the IP it doesn't make much difference whether you do a natural or manual release. Also with the potatoes, the time may need to be adjusted depeding on the size of the potatoes, there are charts you can find online that give a good idea of what time to set for different sizes.

Everybody has a different appetite, so you may be eating just the right amount for you! Working out can definitely increase your appetite though if you are needing to eat more for particular nurition or weight goals.

@@patayres4013 Everyone's portion sizes will need to be different based on body size, activity level, and health goals. I recommend focusing on eating whole plant foods, and trying not to focus so much on the amount of food. But everyone will be different.🙂
