One thing about corn tortillas, the work better warm so microwave them for 30 seconds to turn them soft first then they’ll be much easier to fold and stay down!

I agree. I make baked tacos several times a month - another thing I do - I place an empty cookie sheet over the folded tacos - helps with browning and keeping them flat. The potatoes looked fabulous!

One thing I do is mix sour cream and salsa together and layer that on the tortillas first, it helps it to stick and ups the flavor big time. I used that for chicken quesadillas too. So yummy 😋🤤

@22lilacsky I use the salsa & sour cream together as well ! it's delicious & easy. It's really good on quesadillas, as you said. I've also made a Southwestern salad dressing out of it. Just add some extra virgin olive oil or even canola oil to it to thin it out. After making the salad with different greens, most of the time, it's romaine lettuce, bibb lettuce & small leafy spinach. I add drained giblet corn (from and thawed. I try to avoid eating any canned goods (other than tomato sauce or diced tomatoes), the fire roasted corn works well, black beans drained and minced, halved Roma or small cherry tomatoes cut in slices, jalapeños, seeded and the membranes sliced out. I added roasted chicken breasts cooked on the bone. I take off the skin and debone after the roasting process. (You can use a plain rotisserie chicken, cut in smaller chunks, or shredded. I either dredge it in an egg mixture with milk, then a little flour mix in garlic powder, onion, cumin chili powder & and paprika, or use a fajita mix seasoning pack. (Many shortcuts). 🤣then back in the egg, then back in the flour mixture fry Just to heat through, or you can grill the chicken or put it in the oven to warm through. I also grate sharp cheddar cheese and Montery Jack or Pepper Jack if you want more heat. I will add the grated cheese and put it in the salad last before serving. I then take a medium sized tortilla and cut it into strips and either fry it in 350 canola or vegetable oil, until drip, drain on paper towels and then while the strips are still warm I use the same homemade seasoning or a packaged fajita seasoning packet. Add the tortilla strips just right before serving. You'll love the salad, and it's much cheaper than buying those already made salads you can get at the grocery store that cost $7 and $8 🤣

A tip for fried chicken, try a yellow mustard marinade, yes, just plain yellow mustard. 😊 you won't be sorry. Marinade at least 4 hours or overnight. Then fry it the way you normally do. It grills deliciously.

When I do homemade taco seasoning I stir in a teaspoon or two of arrow root (you can also use cornstarch) into 1/4 cup water and pour it over the meat once it's mostly done and let it cook and thicken for minute or two. Store bought usually has a thickener in it and you usually add water to it. That's why it's saucy.

When you use the Taco Seasoning you have to add some water like 1/2 cup and simmer for a few minutes to not make the taco mixture to dry.

Your burgers look good. I use Montreal Steak Seasoning by McCormick , as I do with all of my ground chuck dishes or steaks. It is delicious on a pot roast. I also use Worcestershire sauce, when frying or searing any beef.

Hey there sweetie I saw someone somewhere do your tortillas the way you did but put the cheese down first. Then meat the cheeses wi stick together!!!! Tic Tok I think is where I saw the lady do just that!!!! Hope it helps you out or do them in the cast iron skillet!!!!!

Get you a spray bottle and put your oil in it to spray your chicken legs or anything I use that in stead of cooking spray I love being able to just mist anything lightly

I reccomend heating the corn tortillas in a small amount of oil for 15 seconds on each side and that will keep them from falling apart. Then if baking them I would have filled them and folded them over and pot another cookie sheet on top to help crisp both sides at once and keep them closed too. If corn tortillas aren't warmed enough they are a pain!!!

Use a toothpick to hold tortillas shut. I do a baked taco and I stand mine up and wedge them in the baking pan as I make them, much less messy than laying them down.

Your family eats such a small amount. My husband and all 3 of my children as well as myself eat at least 2 hamburgers each and when the boys became teenagers they ate 3. With the chicken legs I can eat 4 or 5 by myself as well as the kids could too with sides. I’m glad that my children are all grown because I would hate to see my grocery bill with the prices today. We are not really big people although both of the boys are over 6’ and my daughter is 5’11”. But no one has a weight problem but we all have big appetites but so does the rest of the family. My sister in law cooks a lot of food for each meal even though it’s only 3 of them at home but my nephew eats a lot. He’s 6’ 9” but only weighs 175lbs. but he eats huge amounts about every 3-4 hours.

It's called Rico's and it's in the red can. I find it at Walmart. It's not the cheap plastic nacho cheese sauce, it's actually cheese and creamy and the flavor is as good as if you had the best nacho cheese sauce recipe only no extra work. It's not really spicy, I add jalapenos for that. Not Kristen but hope that helps :)
