A Kristin Stepp cookbook would be at the top of my Christmas list! These recipes look so good.... making me think about getting a crock pot..... they seem really convenient and I'd love to try that pot roast recipe

My newest go too recipe. Stew meat coated in flour. Brown in a skillet w/ a little hot oil. Dump into crock pot. In 3 T butter. Add 3 sliced onions. Cook till browned (not fully cooked). Dump into cp. Deglaze skillet w/ 1/4 c. beef broth. Pour into cp. Add bag of baby carrots & peeled and cubbed sweet or regular potatoes. Heat 2 c. Beef broth OR water. Stir in 1 packet onion soup mix. Cook 30 min on high. Then 6 hrs on low. Stir 1/4? c. Water w/ 2? 3? T cornstarch. Stir into cp. Cook a few min on low. Enjoy. Have made 2 x so far. Hubby, son & house guest LOVE IT.

I like to make a chicken salsa in the CP. for my husband and me, I use a pound of chicken tenders, 8 oz of jarred picante sauce - we like Pace brand - a cup to a cup and a half of frozen corn, about a half packet of taco seasoning, and I cook black beans separately for myself because the hub is not a fan. Otherwise, dump in a can of black beans. I cook on low for 3-4 hours until chicken is 165. I haven’t cooked a beef roast in the CP in a longtime, and mashed potatoes with it sounds like a cozy meal! ❤

To make it more economical, add potatoes, celery, and then make biscuits or bread. Then for leftovers you can shred the meats,mash potatoes with gravy.mmm You get 2 meals out of the meat.❤❤

If you add the potatoes whole with the roast it will save you the step of having to boil the potatoes for mashed potatoes. Plus, it gives you additional flavor which is so nice.

While all these recipes look delicious, I don't think it's too budget friendly. Meats like roast, ground beef, etc.. are too expensive right now and about to get even pricier. The one with the pirogue seemed the most budget friendly but even that recipe used 4 boxes. I'm sure these recipes are as delicious as they look though. Thanks.

I know prices vary depending on where you are. Everything I buy is usually on sale, I also coupon a lot. It is budget friendly on my end but I understand what you are saying, maybe I can start offering more tips for others to save like I do or just explain better.

I made pumpkin ricotta lasagna rolls up on Sunday, with homemade Alfredo sauce. Daughter and I loved them, but I just realized my recipe didn’t have any spices in the filling so I’ll save yours and try them next time.

The stuffed shells with pumpkin actually sounds really yum! Tip for your mashed potato, always add the butter first before anything else, that way the butter penetrates the potato first. It makes a world of difference
