Came here to find out what the heck is the difference between whole wheat flour vs plain wheat flour and I guess now I am making my own flour.

I’ve watched all these videos this morning. I had no idea what store bought flour actually was. I recently learned to cook abs and I’m starting to try baking now. So much more info and I thank you for teaching me this about grains. Stay blessed

I would not consider pellagra as caused by modern technology , pellagra is primarily encountered in areas where corn is the primary diet, corn is a poor source of niacin and tryptophan a essential amino acid and hence regular consumption leads to pellagra. The natives of the new world knew about this and would prepare maize with an alkali, like lime, a process known as Nixtamalization which would make niacin nutritionally available. Early European settlers did not realize the importance of nixtamalization and hence did not always adopt it and once the use of maize spread to Europe and Asia pellagra outbreaks happened. Since pellagra outbreaks occurred in maize dominant areas, early theories surmised that maybe there was a toxin in maize or was a carrier of disease. Later on work by Joseph Goldberger led to the understanding of the link between poor diet and pellagra, though it was only in 1973 that Conrad Elvehjem and Tom Douglas Spies showed that pellagra was caused by lack of Vitamin B niacin and tryptophan.

You're right, pellagra is not caused by modern technology. To be clear, I didn't say pellagra is caused by modern technology. The problem I was referring to was the problem of the niacin having been removed in the first place.

I am ENLIGHTENED ! Thanx for the beautiful clarification. Accordingly healthy bread can only be made by milling the untouched wheat berry on site at the bakery ! Unfortunately no one does that. If I knew the trade I would do it.

Oh I learned another great thing from you about flour! I always buy the unbleached variety but was always confused about the enriched part. hmmmm you have me thinking about this whole process of making my own flour.

Bread is the main problem I have following my Mediterranean style diet in the US. If you walk into Wal Mart you can't find a bread that's just WW Flour,Yeast,Salt (True European style) . And if you do it's like $6 a loaf.

Finally, the vid I've been looking for... just to add a useful information, processed wheat is a major cause of diabetes. Same goes for processed rice and other processed grains that have been stripped down by the food industry.

Nice! Einkorn is delicious, but generates very little gluten, so it's hard to make a good loaf with it.

The problem with fresh flour is that it's hard to manage while making food, it is not as flexible as wheat, which is why most bakers still prefer to use all purpose flour, but then again people prefer visually appealing and better tasting food, and never aware of the nutritional information, and when they try with the home made flour, it seems a worse option... But for proper health one has to compromise in some aspects... And if one becomes pro in cooking even homemade flour can taste better than all purpose flour

I wouldn't bother to buy a mill, just buy flours from the store. I think you highlighted that the reason why wholegrain (brown) flour costs more than white is because the expiry dates are different.

I did know some of the story behind white bread. These propaganda about whole bread left me with a question : why do they refine grain if wholebread is healthier?. There must be a reason, we can't just make something unnecessary without a reason to do it. I know commercial "whole bread" is a lie, many experts have talked about it, but there had to be a reason why we don't have real commercial whole bread. Then I learned about the spoiling factor, white bread lasts longer, something that's economically good and lowers the price of the product. Real whole bread wouldn't last as long and would be even more expensive than fake whole bread is. So yes, economically speaking whole bread as a product is not possible right now. I didn't know the part about the epidemic caused by the lack of nutrients with early white bread.
