Lovely. Always enjoy your recipes. I’m still traumatised from the other day when a very nice lady from America did a video on what she claimed was the best Scottish shortbread ever. Putting aside her recipe was from a San Francisco bakery, she recommended very softened butter which she beat with salt for about 10 mins until and I quote “the texture of mayonnaise!” 😱🤯 She said she preferred it to any shortbread she had in Scotland! I was clutching my pearls and summoned my fainting couch by that point. 😳😃

A tip my blue ribbon-winning hubby uses is: start incorporating the butter using a pastry cutter to shorten the time the hands are in contact with the butter, thereby keeping the butter as cold as possible. He just finishes the incorporation by hand as the hand is the best tool to know when the dough is ready. Hot hands are the enemy of shortbread!

Great idea! I'd also put the bowl and cutter in the fridge before I gather the ingredients. That would help keep things cold as the butter is worked in.

@@emiliebova I miss my Mother too. Sometimes I just do things I know she enjoyed, like tea and shortbread, or her favorite chocolate. It makes me feel she is close. She passed in 2006.

The nicest piece of shortbread petticoat tail that I have ever had was from a small gift shop near Loch Lomond when I was on a coach tour. The shopkeeper had a small metal frame that had a metal plate with a small tea-light candle lit beneath it and he placed the pieces of shortbread on top of the plate and as potential customers entered his store, he invited everyone to take a piece for free. I don’t know if it was because it was warmed up or because it was free but everyone on the coach bought a box of petticoat tails from his shop before they returned to their seats on the coach. So I would recommend that everyone should try your shortbread but they should lightly warm it before eating.

Thank you for your video! I like how you mentioned in the video that it SEEMS like it will never come together because it is too dry! My Grandad used to make this all the time, sadly we lost him in the early 90’s. We all still miss his shortbreads. My grandparents were from Scotland before the came to Australia as 10 pound poms 😊

I’ve loved shortbread since I was 12 or 13 and in junior high (60 years ago!!!). My friend, Sheila MacKay’s Scottish father made shortbread every weekend. She had a piece in her lunch every day and was tired of it, so she gave it to me. Heaven!! I had a good laugh when you said it would stay fresh for weeks. It doesn’t last 2 days when I make it. Thank you for showing the correct way to make it.

And just an odd comment here, I recently did my DNA 🧬, as I am adopted and don't know anything about myself. My family always used rice flour in their shortbread - half and half with plain flour. I grew up believing that was the traditional Scottish way. However, yours looks delicious. And now that I think about it, a few hundred years ago, rice wouldn't have been common in Scotland.

I have making shortbread since 1978, I got the recipe from someone who was stationed in Scotland, I bake it in a pie tin and instead of rolling it out I just press it in the tin and then use the fork tines as you do. But I have never heard of sprinkling sugar on top. I cut mine into slightly smaller wedges. It is so good with a cup of hot tea.

My grandmother's recipe - other than the act we use brown sugar and mix the b sugar and butter the night before so that it incorporates well and makes a fine texture. Will try with castor sugar. Thanks

A recipe usually contains measurements. This shortbread is usually made 3.2.1 (3 parts flour. 2 parts butter and 1 part confectioners sugar.

I make a lemon ginger shortbread, the ginger used is crystallized ginger and it’s so tender and flakey and all my friends beg me to make it, however it’s much more work than this one so I only make it for special occasions. Nice recipe , I make mine in a saucepan ,but later years melt the butter in a microwave , no rolling out , just pressed into 2 sandwich tins , think the addition of cornflour makes it nice and short , my recipe is from The Women's Institute from the late 70s , but I will certainly give yours a try , nowadays there are very few shop bought shortbreads made with pure butter , many contain rapeseed oil and palm oil which I personally feel is neither good or sustainable , think of all the poor orangutans that have lost their homelands due to man's greed 😮😮😮

I make this every Christmas-an almost identical recipe(using measure vs weight). Sometimes I sprinkle with red or green sugar or a dash of cinnamon. Love the simplicity, thank you for sharing!!

I did it, I finally did it. I just gave your recipe a try. Turned out ok. I pulled it out of the oven a bit early, so I put it back in and over did it a tiny bit but tastes ok. My 1st try on shortbread. I found the dough little hard on the wrist. I doubt I will be be able to make it in 10 years as my joints get worse. So I better enjoy it while I can. Thanks for the recipe.

This just happened to pop up, and being of strong "Scotdinavian" decent and a chef myself, I had to take a look. I search the internet looking for traditional Scottish, Irish, Norwegian, Swedish, and Finnish recipes. I also love simple recipes that aren't too froo froo, but focus rather on quality ingredients, ease of procedures, and cultural history. This recipe, and in fact your whole channel in large part, seems to be aligned well with those parameters. Thank you for sharing, and consider me your newest subscriber and a thumbs up from Seattle, WA USA. I look forward to rummaging round your other video installments, and preparing some of them as well. This shortbread is first on the list though.
