Plo koon also donned an orange lightsaber as well,in addition to a lightsaber gauntlet he wore on his hand,like a freddy krueger style glove

Their first action figures had colored lightsabers too. I remember purely getting Plo Koon just to have a yellow lightsaber. Ki adi Mundi came with a purple lightsaber

Actually, Windu had a blue lightsaber trough Episode 1, you can even see how he even has a different hilt than in ep2 and ep3. But since he never ignited it, everyone just thinks that it was purple.
