The amount gets used on the bottom of the pain on the bread before it bakes and add more once it’s done she used it all

Your dough for Nigella's recipe wasn't wet enough, and you didn't knead it enough. That's why it was cakey. Should be more like a focaccia. It's also not really a garlic bread so probably shouldn't have been included. Michele Roux's wasn't really a garlic bread either. You've just picked some random bread recipes that have garlic in them. Poor effort.

@@Gurinder828 I found a cookbook review that mentioned "garlic bread that’s baked with cloves of garlic confit in the dough" as one of the recipes, but didn't give any more detail. The way it was done here is very bizarre, so it may have been done incorrectly.
