Considering the fat is still white and not rendered, not even on the very outside of it means it's actually not cooked properly. Is the temperature correct for medium rare? I guess, but still not cooked to perfection.

Sometimes they pump up the colors on the show for the food shots to make them look better - it's hard to tell the temp of the meat with these shows

Had he said that to a judge in masterchef US, he would be made fun of in 0,001 seconds by the judges. Except Graham Elliot, he's my favorite judge from MC US, since he actually gives constructive criticism without bashing the contestants.

So is culinary training mandatory in Canada? Everyone's food was presented like 5 star restaurants and not home cooks

The point of MasterChef is to take home cooks and push them into the territory of fine dining/professional cooking. Because of this, the home cooks have to be exceptional in the competition, and go out of their comfort zone. The reason why the food was scrutinized was because if you want to be in MasterChef, you need to cook like one, while not having the highest skills.

What I learned about how to cook red meat for any professional chef: Don't.

@J Randall i prefer medium rare. It's still tender and juicy. The longer the meat cooks, the more it stiffens up. Rarer meats can feel like butter when done well, as opposed to the constant chew that cooked meats provide.

@J Randall I never understand that; I prefer medium too. I don't get why professional chefs like to puree mash to death either. Mash should have a good body to it (obviously no lumps though). It might be soft but it shouldn't have the consistency of baby food.

@J Randall medium rare is preferred for these reasons: 1. It is the most popular way to cook red meat 2. A vast majority of chefs agree that medium rare is the way to go to bringing out the most flavor in the meat. This is because the meat doesnt become dry (a common problem with well done dishes), filled with juices, makes a amazing golden crust that is easy to manage with the temperature with the meat inside, and many steak seasonings like rosemary (which is very strong) needs to have the meat preserve its own strong flavor so the rosemary doesnt overpower it, it also keeps the meat tender (as the muscles start to cook the more they start to contract and stiffen up) and unlike rare the middle is warm and is a less likely to give you a a meat disease (which only really occurs in people with pre existing blood diseases or with badly contained food).

For those wondering about the aprons already being embroidered. The apron the judges hand contestants at the station is a generic one. There is then a cut where the real apron is given by an offscreen crew member. Then they tesume filming for their walk up yhe stairs. Rinse and repeat when needed.
